Another easy way (according to Good Housekeeping Cookbook) to cook frozen vegetables is to bake them. When baking a casserole, meat loaf, etc., just bake a regular sized box of frozen vegetables (for 3-4 servings), in a covered casserole along with your meat, placing it in oven so it will be done at the same time as main dish. I am not saying this is the best way to fix vegetables, but that this is an easy way to free you up for something else. I know life can be very busy. If baking at 325 degrees increase cooking time about 10 minutes. If baking at 375 degrees decrease time about 10 minutes. I put frozen broccoli spears into ingredients but any frozen vegetable will work.

1 (8 ounce) frozen broccoli spears
1 -2 tablespoon butter
1/4 teaspoon salt

Steps:

  • Preheat oven to 350 degrees.
  • Put frozen vegetable, butter, and salt into casserole.
  • Cover.
  • Baking time depends upon the vegetable.
  • Broccoli spears and brussels sprouts should bake between 40 and 45 minutes.
  • Broccoli chopped, whole kernel corn, spinach leaves or chopped, squash, and peas take 45 to 50 minutes.
  • Cauliflower takes 50 to 55 minutes.
  • Asparagus cuts and spears, any version of green beans, baby lima beans, mixed peas with carrots, and succotash take between 55 and 60 minutes.
  • Mixed vegetables and wax beans cut take 60 minutes.

If you're like me and love roasting veggies but don't always have fresh vegetables on hand, I've got great news for you. You can roast frozen vegetables! Frozen veggies are picked at the peak of their ripeness and flash-frozen to lock in those flavors and roasting them straight from the freezer is so easy.

1 16 ounce bag frozen vegetables
1 Tablespoon olive oil
Salt and Pepper

Steps:

  • Preheat your oven to 450°F. Place a baking sheet in the oven while it heats up.
  • In a mixing bowl, toss the frozen vegetables with the oil. Sprinkle with salt, pepper, and any other seasonings you want to use.
  • Spread the vegetables in a single layer on the hot baking sheet. Roast for 15 minutes, then give them a good stir. Return them to the oven and bake for another 10-15 minutes, or until the edges are golden brown and crisp. (Note larger cuts and sturdier vegetables will take longer to roast than more delicate vegetables. Some, like green beans, may be done after the first 15 minutes.)
