Hong Kong Chicken is one of the most delicious chicken recipes cooked as per the techniques of Hong Kong cuisine.

Number Of Ingredients 10

1 cup Chicken (chopped, boneless, skinless)
1/2 cup Red Chilli Paste (or as required depending on individual taste)
2 nos Eggs
3 tsp Cornflour
1/4 cup Maida
1/4 cup Ginger Garlic Paste (adjust as required)
1 cup Onion (chopped)
1/2 cup Cashewnuts (finely chopped or crushed)
Salt (as per taste)
Few Coriander Leaves (finely chopped)

Steps:

  • Beat the eggs with cornflour, maida and little water.
  • Keep aside.
  • Sprinkle salt on the chicken and add the egg mixture.
  • Mix well and keep aside for 15 to 20 minutes.
  • Heat little oil in a pan over medium flame.
  • Then fry the marinated chicken in hot oil and remove.
  • Drain excess oil and keep the chicken pieces warm.
  • To the same pan, add a little oil and saute the ginger garlic paste and onions for a minute or two.
  • Add the cashewnuts and fry for another minute.
  • Add the red chilli paste and simmer for 2 minutes, adding 1/4 cup of water.
  • Add the fried chicken pieces and cook for 2 minutes.
  • Once the gravy starts to thicken, remove from flame.
  • Garnish with coriander leaves.
  • Serve hot.

Boneless chicken breast,Oil,Salt,Black pepper powder,Cornflour/ corn starch,Egg,Spring onions with greens,Dried red chillies,Ginger,Garlic,Red chilli paste,Red chilli sauce,Soy sauce,Chicken stock,Sugar,Vinegar,

Steps:

  • Heat sufficient oil in a deep pan.
  • Place chicken in a bowl, add salt, pepper powder and 2 teaspoons cornstarch.
  • Break an egg into another bowl and whisk well. Add half egg to the chicken mixture and mix well.
  • Slide the chicken cubes into hot oil and deep-fry chicken till golden and crisp. Drain on absorbent paper.
  • Halve spring onion bulbs,reserving greens,and separate layers. Diagonally slice dried red chillies and discard seeds.
  • To prepare sauce, heat 1 tablespoon oil in a non-stick pan. Add ginger and saute for 30 seconds. Add garlic, mix and saute on high heat.
  • Add sliced dried red chillies, red chilli paste, red chilli sauce, soy sauce, ¼ cup chicken stock and spring onion bulbs, mix well and saute for a minute.

  • To Prep Rinse the chicken and pat dry with a paper towel. Insert half of the sliced garlic and ginger into the cavity. Set aside. To make the marinade, combine the remaining ingredients in a mixing bowl until the sugar has dissolved. Place the chicken into a large ziplock bag. Pour half of the marinade into the cavity, then the remaining marinade all over the chicken skin. Add in the rest of the sliced ginger and garlic. Seal the ziplock bag, ensuring you remove the air. Carefully rub the marinade all over the chicken to ensure it is covered. Transfer into a large mixing bowl and leave in the fridge to marinate overnight. To Cook Remove the chicken from the marinade, ensuring there is nothing left in the cavity. Place on a wire rack over a baking tray lined with foil. Allow to air dry for 1 hr, or until the skin is dry. Preheat the oven to 200°C. When the skin has dried, use kitchen string to tie the legs together, and cover the wing tips and ends of the legs with some foil sprayed with oil. Roast for 90 mins on the bottom rack, rotating the tray every 30 mins. Check the internal temperature by inserting a meat thermometer into the thickest part of the leg. The temperature should read 75°C. Remove from the oven and allow to rest for 20 mins, then serve.
