1/3 c. low-sodium soy sauce
1 1/2 tbsp. rice wine vinegar
1 tsp. sesame oil
1 1/2 tbsp. honey
2 cloves garlic, minced
2 tsp. finely minced fresh ginger
1 1/2 tsp. cornstarch
1 tbsp. vegetable oil
1 lb. boneless skinless chicken breasts, cut into 1" pieces
Kosher salt
Freshly ground black pepper
Sesame seeds, for garnish
Sliced green onions, for garnish
Cooked white rice, for serving
Steamed broccoli, for serving

Steps:

  • Make sauce: In a medium bowl, whisk together soy sauce, rice vinegar, oil, honey, garlic, ginger, and cornstarch.
  • Make chicken: In a large skillet over medium heat, heat oil. Add chicken to skillet and season with salt and pepper. Cook until golden and almost cooked through, about 10 minutes.
  • Pour sauce over chicken and simmer until sauce has thickened slightly and chicken is cooked through, 5 minutes. 
  • Garnish with sesame seeds and green onions. Serve over rice with steamed broccoli.

1 (3 pound) whole chicken, cut in half
¾ cup granulated sugar
¾ cup soy sauce
1 tablespoon grated fresh ginger
2 cloves garlic, minced

Steps:

  • Rinse chicken halves, and pat dry with paper towels. Place chicken cut side down in a 9x13 inch baking dish.
  • In a medium mixing bowl, combine sugar, soy sauce, grated ginger and garlic. Mix well, and pour mixture over chicken. Cover and refrigerate for at least 3 hours.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Bake chicken uncovered in the preheated oven for 1 hour, basting frequently. Test for doneness, making sure there is no pink left in the meat. Let cool slightly, then cut into smaller pieces to serve.
