What is Hollandaise Sauce, anyway? One of the “mother” sauces in classic French cuisine, this fundamental is perhaps best known in the United States as a decadent topping to eggs benedict. While this is indeed a wonderful way to use hollandaise, this creamy, rich, lemon-tinged sauce has so many other uses! And because Hollandaise Sauce is so easy to make—containing only butter, eggs and lemon—this Hollandaise Sauce recipe is worth committing to memory.

3 large egg yolks
1 tablespoon lemon juice
1/2 cup firm butter

Steps:

  • In 1 1/2-quart saucepan, vigorously stir egg yolks and lemon juice with wire whisk. Add 1/4 cup of the butter. Heat over very low heat, stirring constantly with wire whisk, until butter is melted.
  • Add remaining 1/4 cup butter. Continue stirring vigorously until butter is melted and sauce is thickened. (Be sure butter melts slowly so eggs have time to cook and thicken sauce without curdling.) If the sauce curdles (mixture begins to separate), add about 1 tablespoon boiling water and beat vigorously with wire whisk or hand beater until it's smooth.
  • Serve immediately. Store covered in refrigerator. To serve refrigerated sauce, reheat over very low heat and stir in a small amount of water.

1 pound lean ground beef
1 egg
1 teaspoon garlic powder
1 teaspoon onion powder
1 tablespoon Worcestershire sauce
4 hamburger buns
4 slices of American cheese
4 eggs
1 tablespoon salted butter
3 egg yolks, at room temperature
10 tablespoons salted butter
1 tablespoon lemon juice

Steps:

  • Make the hollandaise sauce. Add butter in a bowl and place in a microwave. Place a paper towel on top to prevent mess. Microwave for 10-15 seconds, until the butter is melted. Place the yolks in a food processor or blender. Add the melted butter into the blender, as well as the lemon juice and blend until smooth. Set aside.
  • Make the patties. Combine the ground beef, egg, garlic powder, onion powder, and Worcestershire sauce in a bowl and combine. Split the meat mixture in four equal parts. Form each portion into a patty.
  • Cook the patties. Heat the grill to medium high heat. Add the patties on top of the grill grates. Grill the first side about 3 minutes or until charred. Flip the burger over and cook for an additional 6 minutes, or until your desired doneness. Add cheese for one minute on each patty until melted. Remove and let the patties rest. If you like your buns toasted, toast in the grill for 1-2 minutes on each side.
  • Make the fried egg. In a small frying pan,  add the butter and wait for it to melt. Let the eggs cook undisturbed until the whites are almost completely set and opaque except for the ½-inch area around the yolks, about 2 minutes. For Sunnyside up, eat as is. For over easy, flip the egg and cook for 30 seconds more.
  • Assemble the burger. Place the patty on a bun and top with the fried egg. Add a tablespoon of hollandaise sauce and top with the bun.

  • Remove the bowl from over the pan and gradually add the butter, 1 piece at a time, and whisk until all of the butter is incorporated. Place the bowl back over the simmering water occasionally so that it will be warm enough the melt the butter. Add the salt, lemon juice, and cayenne pepper.
