The herb mixture used in this 30-minute recipe is a variation on the traditional Italian condiment, gremolata.

? cup chopped Italian (flat leaf )parsley
1 tablespoon chopped fresh oregano
1 tablespoon finely shredded lemon peel
1 tablespoon finely chopped garlic (about 3 cloves)
3 tablespoons butter
4 skinless, boneless chicken breast halves
¼ cup chicken broth

Steps:

  • In small bowl stir together parsley, oregano, lemon peel, and garlic. Set aside. Season chicken with salt and pepper.
  • In 10-inch skillet over medium-high heat cook chicken in butter for 6 minutes or until browned, turning once. Transfer to plate. Remove skillet from heat; stir in half herb mixture. Return to heat. Add broth; bring to boiling, stirring to scrape up browned bits. Return chicken to skillet; reduce heat. Simmer, covered, 8 minutes or until chicken is no longer pink.
  • Serve with pan sauce; sprinkle with remaining herb mixture. Makes 4 servings.

3 tablespoons olive oil
1 tablespoon minced onion
1 clove crushed garlic
1 teaspoon dried thyme
½ teaspoon dried rosemary, crushed
¼ teaspoon ground sage
¼ teaspoon dried marjoram
½ teaspoon salt
½ teaspoon ground black pepper
? teaspoon hot pepper sauce
4 bone-in chicken breast halves, with skin
1?½ tablespoons chopped fresh parsley

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • In a bowl, prepare the basting sauce by combining olive oil, onion, garlic, thyme, rosemary, sage, marjoram, salt, pepper, and hot pepper sauce.
  • Turn chicken breasts in sauce to coat thoroughly. Place skin side up in a shallow baking dish. Cover.
  • Roast at 425 degrees F (220 degrees C), basting occasionally with pan drippings, for about 35 to 45 minutes. Remove to warm platter, spoon pan juices over, and sprinkle with fresh parsley.
