Creamy, easy, cheesy hashbrown potato casserole with sour cream that’s so versatile it can be served for breakfast, lunch or dinner! We're in.

32 oz bag frozen hash browns, thawed (cubed or shredded)
2 cups sour cream, (16 ounces)
1 small onion, finely chopped
1 can cream of chicken soup, cream of mushroom soup, cheese soup, or potato soup
2 cups shredded cheddar cheese, divided
1/4 cup butter, melted
1 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Preheat oven to 350°F. Lightly grease a 13x9 pan; set aside. In a large bowl combine the potatoes, sour cream, onion, cream soup, 1 ½ cups cheese, butter, salt and pepper. Mix well and taste for additional salt and pepper if necessary. Spread into prepared pan and bake uncovered at 350°F for 45 minutes. Remove from oven and top with remaining ½ cup of cheese. Bake for an additional 10 minutes, or until golden and bubbly.

This is an easy and tasty hashbrown and ham casserole that's perfect for breakfast, brunch or as a sidedish. You can use either shredded frozen hashbrowns or Southern style (diced) hashbrowns. The french fried onions can be substituted with crumbled potato chips.

1 (2 lb) package frozen hash brown potatoes
1 (10 3/4 ounce) can cream of mushroom soup (undiluted)
1 cup diced ham
1/8 teaspoon dried thyme
3 cups packed grated sharp cheddar cheese
1 cup sour cream
1 cup finely chopped onion
1 (6 ounce) can French-fried onions or 1 (6 ounce) can crumbled potato chips

Steps:

  • Pre-heat oven to 350°F.
  • In a bowl, add all ingredients and mix until well combined.
  • Pour into a 13x9 casserole dish.
  • Bake for 1 hour or until top is slightly golden.
  • Sprinkle top with french fried onions (or crumbled potato chips) and bake an additional 10 minutes or until golden brown.

  • Preheat oven to 375°. In a large bowl, mix the first 6 ingredients; stir in potatoes, cheese and bacon. Transfer to a greased 13x9-in. baking dish. Bake until golden brown, 50-60 minutes.
    Freeze option: Cover and freeze unbaked casserole. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 375°. Bake casserole as directed until top is golden brown and a thermometer inserted in center reads 165°, increasing time to 1-1/4 to 1-1/2 hours.
