There is just one word to describe this apple cinnamon loaf, and it's delicious!

1/3 cup(s) brown sugar (not packed
1 teaspoon(s) ground cinnamon
2/3 cup(s) white sugar
1/2 cup(s) butter softened
2 - eggs
1 1/2 teaspoon(s) vanilla extract
1 1/2 cup(s) all-purpose flour
1 3/4 teaspoon(s) baking powder
1/2 cup(s) milk
1 - apple, peeled

Steps:

  • Preheat oven to 350 degrees F. Grease and flour a 9x5 inch loaf pan.
  • Mix brown sugar and cinnamon together in a bowl and set aside. Beat white sugar and butter together in a bowl using an electric mixer until smooth and creamy. Beat in eggs, 1 at a time, until incorporated; add vanilla extract.
  • Combine the flour and baking powder together in another bowl; stir into creamed butter mixture. Mix milk into batter until smooth.
  • Pour half the batter into prepared pan. Next add half the apples and half the brown sugar cinnamon mixture. Lightly pat apples into batter.
  • Pour the remaining batter over apple layer; top with remaining apples and add more brown sugar cinnamon mixture. Lightly pat apples into batter; swirl brown sugar mixture through apples using a finger or spoon.
  • Bake in preheated oven until a toothpick inserted in center of loaf comes out clean, 30-40 minutes. This recipe took 65 minutes in my oven.

1 medium onion, chopped
2 teaspoons canola oil
2 large eggs, lightly beaten
1/3 cup 2% milk
2 teaspoons Worcestershire sauce
2 teaspoons Dijon mustard
2/3 cup finely crushed cheese crackers
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon dried thyme
1-1/2 pounds ground beef
1/2 pound ground pork
3/4 cup ketchup
1/4 cup packed brown sugar

Steps:

  • Saute onion in oil in a small skillet until tender. Cool to room temperature., Combine the eggs, milk, Worcestershire sauce, mustard, crackers, salt, pepper, thyme and onion in a large bowl. Crumble beef and pork over mixture and mix well. Shape into a loaf; place in a greased 11x7-in. baking dish., Bake, uncovered, at 350° for 1 hour. Combine ketchup and brown sugar; spread half of sauce over meat loaf. Bake 15-20 minutes longer or until no pink remains and a thermometer reads 160°. Let stand for 10 minutes before slicing. Serve with remaining sauce.
