Ingredients

1 1/4 lbs ground turkey
1 yellow onion, chopped
3 garlic cloves, minced
1 (28 ounce) can crushed tomatoes
1 (6 ounce) can tomato paste
1 cup chicken broth
1 tablespoon dried oregano
1 tablespoon dried basil
1 teaspoon dried thyme
1 teaspoon sea salt
1/2 teaspoon cracked black pepper
1 tablespoon butter

Steps:

In a 4 1/2 quart pot/pan brown the ground turkey over medium heat.
Add the onion and garlic and cook until softened.
Add tomato paste and crushed tomatoes, stirring until all is combined.
Add chicken broth to thin it down a little bit.
Add spices, butter, and salt and pepper and allow to simmer over low heat for about 15 minutes (just long enough to boil the water and cook the pasta!).
Taste and adjust seasonings to preference.

12 oz. spaghetti
1 large onion, diced
2 cloves garlic, minced
1 large carrot
1 lb. ground turkey
kosher salt
Freshly ground black pepper
1 c. white wine
1 28-oz. can crushed tomatoes
2 tbsp. freshly chopped rosemary
Freshly chopped parsley, for garnish
Freshly grated Parmesan, for garnish

Steps:

In a large pot of salted boiling water, cook spaghetti according to package directions until al dente. Drain and return to pot. Meanwhile, in a large skillet over medium-high heat, cook onion, garlic, and carrot until tender, 5 minutes. Add turkey and cook until golden, 6 to 8 minutes, then season with salt and pepper. Add wine, crushed tomatoes, and rosemary and let cook, 5 minutes. Toss spaghetti with ragu and garnish with parsley and Parmesan.

Once the squash is cool enough to handle, use a fork to scrape the inside so the strands appear. Spoon scant 1/2 cup meat inside each squash bowl. Stir in the turkey, broccoli, soups and rice; transfer to a greased shallow 2-1/2-qt. baking dish., Bake, uncovered, at 350° until bubbly, 25-30 minutes. Sprinkle with cheese and french-fried onions; bake until cheese is melted, about 5 minutes longer.
Freeze option: Sprinkle cheese and french-fried onions over unbaked casserole. Cover and freeze. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake casserole as directed, increasing time as necessary to heat through and for a thermometer inserted in center to read 165°.
