1 large onion, diced
1 lb. ground turkey
2 cloves garlic, minced
1 tbsp. dried oregano
1 tsp. crushed red pepper flakes
2 c. marinara
4 hoagies or Italian rolls
4 slices provolone
Freshly chopped Italian parsley

Steps:

  • In a large skillet over medium heat, heat oil. Add onion and cook, 5 minutes. Add ground turkey, garlic, oregano, and red pepper flakes and cook until golden and no longer pink, 6 to 7 minutes. Add marinara and stir until coated, then let simmer until slightly thickened, 8 minutes. Heat broiler. Spoon ground turkey mixture onto hoagies and top with provolone, then broil until cheese is melty, 2 to 3 minutes. Garnish with Italian parsley and serve.

3 tbsp. tomato paste
3/4 lb. ground turkey (93% lean, dark meat)
1 can crushed tomatoes
2 tbsp. dark-brown sugar
1 tbsp. cider vinegar
1 tsp. Worcestershire sauce
4 whole-wheat hamburger rolls

Steps:

  • In a large saucepan, heat oil over medium; add carrots, onion, and garlic. Season with salt and pepper. Cook, stirring occasionally, until softened, 4 to 5 minutes. Add tomato paste and cook, stirring, 1 minute. Add turkey; cook, breaking up meat with a spoon, until no longer pink, 4 to 5 minutes. Add tomatoes, sugar, vinegar, and Worcestershire sauce. Cook, stirring occasionally, until slightly thickened, 12 to 14 minutes. Serve on whole-wheat rolls.
