This is the perfect recipe for any sandwich that requires that pizza house hoagie roll that we all love. This is a scaled down version of a recipe from the PMQ Recipe Bank where you can find a lot of authentic pizza industry recipes. http://www.pmq.com/recipe/

Number Of Ingredients 6

1 1/8 cups water (about 70 degrees F)
1 5/8 teaspoons salt
3 3/8 teaspoons sugar
1 2/3 tablespoons olive oil
16 ounces bread flour, a strong flour like a Hi-Gluten Flour
2 1/2 teaspoons yeast

Steps:

  • Mix the ingredients until smooth and well-blended. Scale the dough into 3.5 oz balls. I usually get about 7 balls from a batch this size. Allow them to rest for 20-30 minutes then roll them into a thin sheet about 1/4 inch thick. Roll each sheet (jelly roll fashion) to form long slender loaves. Place loaves onto an oiled baking sheet with the seam side down. Keep them 2 inches apart so they do not touch during the next rise.
  • Place the tray of formed loaves in a warm oven (ideal is 100 degrees with 75% humidity). I usually place a bowl of water in the lower oven to keep things humid. Allow the loaves to rise for 45 to 60 minutes.
  • Once risen, use a razor to make a 1/4 inch deep slit on the top of the loaves and mist them lightly with water. Bake for 20 minutes at 450 degrees or until they turn brown.
  • Remove them from the oven and cool them on wire screens or racks. The rolls last only a day or two before becoming stale. They are great for Italian hoagies or Philly Cheese Steak sandwiches.

Very easy rolls to make, and they make an excellent chicken cheese steak sandwich with sauteed mushrooms and onions! This recipe was given to me many years ago, Gizzie might have been the name of the person who created the recipe.

1 1/2 cup(s) water
2 teaspoon(s) salt
2 teaspoon(s) sugar
4 cup(s) bread flour ***
2 1/2 teaspoon(s) yeast
GIZZIE'S GRINDER JUICE
1/2 cup(s) olive oil
2 medium clove(s) garlic, minced
1 1/2 - onion, minced
1/2 teaspoon(s) freshly ground pepper
juice of 2 - medium lemons, or 1/3 c. red wine vinegar
zest of - one lemon
1 teaspoon(s) dried oregano
1/4 teaspoon(s) red pepper flakes
1 tablespoon(s) freshly grated parmesan

Steps:

  • Add ingredients in appropriate order to bread machine. Process on dough setting. (*** I almost always use some wheat flour in place of some of the bread flour, adding 1 tsp of gluten for each cup of wheat flour.)
  • Remove dough from bread pan, let rest for 30 minutes. Remove dough to floured surface, knead in a little more flour, as dough will seem sticky. Lightly grease a baking sheet.
  • Divide the dough into 8 equal sized pieces, flatten and shape into 6" oblongs, 3" wide, 1" high. Place on baking sheet, cover with a clean dish towel and set aside and let rise to double in volume. *** I sometimes divide into 12 pieces and make smaller rolls.
  • Preheat oven to 425. Slash top of each roll with a sharp knife, from one end to the other, about 1/4" deep. Bake in middle of oven 15** minutes at 425, reduce heat to 375, bake an additional 10-15** minutes til lightly browned. (** These times are from the recipe as it was given to me. Watch this, mine only baked for @ 15 minutes total, I reduced to 375 after @ 8 minutes.)
  • Remove from oven, cool and split. You may sprinkle with Gizzie's Grinder Juice, and fill with whatever you would like to have on your sandwich. *** These are best served the same day, or wrap in foil and freeze. To reheat, loosen one end of the foil and bake at 375 until hot and crisp.
  • FOR GIZZIE'S GRINDER JUICE: combine all ingredients in a container with a tight-fitting lid and shake well. Let sit for 4 hours, allowing the flavors to blend. Sprinkle on grinder rolls before adding fillings. Keeps well in the frig up to 2 weeks.
