1 (1 lb.) ring kielbasa or similar precooked sausage
1 tablespoon olive oil
1 onion, chopped
1 tablespoon caraway seeds
1 (1 lb.) package sauerkraut, rinsed and drained
½ cup chicken broth
Pepper
2 cups jarred, unsweetened applesauce, warmed

Steps:

  • Cut kielbasa on an angle, into 3- to 4-inch pieces. Warm oil in a large skillet over medium-high heat; add onion and caraway seeds. Cook, stirring often, until onion is slightly softened, about 3 minutes. Add sausage and cook, turning often, until lightly browned, about 5 minutes.
  • Place sauerkraut on top of sausages and pour in broth. Season lightly with pepper. Cover and cook until warmed through, about 10 minutes. (If sauerkraut seems too wet, boil rapidly for a few minutes. As it boils and liquid evaporates, flavors will also be concentrated.)
  • Serve hot with warmed applesauce on side or with mustard, if desired.

3 pounds Smoked Polish Sausage
1 large onion sliced into "ring" sections
vegetable oil, for brushing the onions
1 1/2 cups Apple Juice (or cider)
1 (2 pound) bag of Frank's Kraut
1 Tablespoon Dijon mustard
1/2 Tablespoon caraway seed
1 teaspoon celery seed

Steps:

  • Set grill to low heat. (180 degrees) Place the sausages directly on the grill, grilling them slowly to give them some grill marks. *slow is the key here - grilling to fast over high heat will cause your sausage to split and you will lose all of the juices.
  • Lightly brush the onions and add them to the grill, too.
  • Both the sausage and onions will have those nice grill marks in only a few minutes.
  • While these are slowly grilling, to a grill safe pan combine apple juice, Dijon mustard, caraway and celery seed. Stir in Frank's Kraut (the juice, too!) Take pan out the the grill.
  • Cut link sausage into quarters, and nestle the grilled sausage and grilled onions into the kraut mixture.
  • Place pan, uncovered, on grill and close the lid. Continue cooking them on a low simmer for one hour.
  • Serve as is, or on hard rolls.
