3 grams Dried lotus leaf
130 grams Glutinous rice
50 grams crystal sugar
1200 grams water

Steps:

  • Lotus leaf glutinous rice ready
  • Wash the dried lotus leaves with water first, soak it
  • Put the lotus leaves in the pot, add water to boil, after the water boils, boil it for a while
  • Fish out the lotus leaf
  • Wash the glutinous rice
  • Pour the rice into the lotus leaf water

4 cups cooked sticky rice
4 lotus leaves
1 teaspoon sugar
1 teaspoon salt
1 teaspoon oyster sauce
1 teaspoon soy sauce
1/4 cup diced cooked chicken
5 teaspoons shrimp, shelled and cooked
2 teaspoons black mushrooms, cooked and diced
1 egg, salted

Steps:

  • Wash the rice several times until the water runs clear.
  • Transfer the rice to a heavy pot or electric rice cooker and add the equal amount of water.
  • Simmer over low heat allowing the rice to steam for 15 minutes more with the cover on at all times.
  • Add sugar, salt, oyster sauce and soy salt to the rice and mix thoroughly.
  • Soak lotus leaves thoroughly in boiling water, wash them and spread them out on a table.
  • Mix all the stuffing ingredients together in a bowl.
  • Spread one thin layer of cooked sticky rice on each lotus leaf then add stuffing on top of rice in the centre.
  • Cover with another thin layer of sticky rice.
  • Fold the lotus leaves inwards and wrap well.
  • Steam them in the steamer over high heat for 10 minutes.

  • To Prep In a medium bowl, stir together the marinade ingredients and add the chicken pieces. Stir well and refrigerate. Soak the sticky rice for 2 hrs, drain and mix with 2 tbsp dark soy sauce and set aside. To Cook Over high heat, add 2 tbsp oil to your wok. When the wok is smoking slightly, add half the mushrooms and stir-fry until they’re browned, tender, and most of the moisture has evaporated. Heat your wok over high heat again with a couple tablespoons oil. Fry until chicken is golden brown before mixing in the mushrooms, scallions and salt. Stir-fry for a couple minutes to let the flavors meld together. Combine with the soaked rice. Now you’re ready to wrap them in the lotus leaves. Brush a small section on one end of each leaf lightly with oil. Put about ¾ cup of the mixture on the oiled area. Wrap each into a rectangle, tie with kitchen string, and steam for about 90 mins. You can serve with a little chili oil or allow them to cool, place into freezer bags, and freeze for later! When you’re ready to eat them, just steam them right out of the freezer for about 30 mins.
