Spicy Sausage Rice Recipe - Gordon Ramsay | A Glug of Oil image

I used the 'La Chinata' brand of Sweet Smoked Paprika; it's really worth getting a tin if you can. Available in Sainsbury's or Waitrose here in the UK or over at Amazon.

Number Of Ingredients 12

1 tbsp olive oil, for frying
1 red onion, sliced
1 red pepper, deseeded and chopped (but not too small)
2 garlic cloves, very finely sliced
5 spiced sausages, e.g. Italian chilli
1 heaped teaspoon smoked paprika (Gordon uses La Chinata brand)
200g long-grain rice (1 cup)
½ glass dry white wine
500ml (2 cups) chicken stock - I used a Knorr stockpot
4 spring onions, trimmed and sliced
2 tomatoes, roughly chopped
small bunch of flat-leaf parsley, roughly chopped

Steps:

  • Add just 1 tbsp of Olive oil to a heavy-based casserole dish and fry the onion for 5 minutes until soft but not coloured.
  • Add the pepper and garlic and cook for 2 minutes while moving it about so the garlic doesn't burn.
  • Slit the sausage skins and crumble the sausage meat so it looks like small meatballs.
  • Turn the heat to high (otherwise, the sausage will steam rather than brown). Cook while moving it about a bit in the pan for about 4–5 minutes until coloured.
  • Add the smoked paprika and mix and season to taste.
  • Add the rice and stir well to mix thoroughly and absorb the flavour.
  • Now deglaze the pan by pouring in the white wine and scraping any bits stuck to the bottom.
  • Add the stock and bring to the boil and then turn to simmer.
  • Cook gently for 15–20 minutes until the rice is tender and the liquid almost entirely absorbed.
  • Keep an eye on it and stir from time to time.
  • Remove from the heat, gently fold in the spring onions, tomato and parsley and serve.

Here are just a few ideas for a Raclette party. You can, of course, make up your own.

You can have whatever takes your fancy but some sort of cheese is a must. If you can't get Raclette cheese, don't worry, I couldn't. Cheddar, Monterey Jack, Gruyère and even Feta cheese all work well.
Sliced mushrooms, sliced red and green bell peppers, jalapeno peppers, sweetcorn, baby tomatoes.
Sliced new potatoes (feeling lazy myself I used the ones in a tin).
Crack an egg into the melting pan and top with grated Monterey Jack cheese then sprinkle with paprika.
Pepperoni, soured cream and chives (only because I had sour cream living in the fridge which needed to be used up) and sliced onion.
Nachos with Salsa, Cheese and Jalapeño Peppers: Crumble up your nachos, top with salsa and a little grated cheese then top with jalapeño peppers. 
Once they've melted under the raclette you can top them with sour cream.
Whatever you are planning to cook be sure to slice chicken, beef or fish thinly.
If you're not going to marinate chicken, meat or fish it's a good idea to drizzle with a tiny bit of oil and mix before cooking, it just helps to cook it better and stop it sticking.
Thinly sliced strips of beef marinated in Jack Daniel's Hot Pepper Steak Sauce, thinly sliced chicken fillet marinated in Old El Paso Original Smoky BBQ spicy mix for fajitas.
Sliced mushrooms, sliced red and green bell peppers, jalapeno peppers, sweetcorn, baby tomatoes. and sliced new potatoes from a tin.

Steps:

  • Prepare all your ingredients first and cover with cling film. 
  • Refrigerate meat, fish and poultry but remove from the fridge 30 minutes before you plan to start cooking.
  • You can prepare a few dishes beforehand or let everyone do their thing, which is what's supposed to happen. 
  • But if you're having a Raclette party for two I find it better to prepare a few first, only because I know what we both like to eat. 
  • Just remember meat, fish and poultry has to be cooked on top of the grill to allow them to cook properly. 
  • Vegetables can go on the top too but they can also go into the melting pans.

    1. Heat a glug of oil in a pan over a high heat. Crush and add the garlic, then stir in 1 pinch of cayenne pepper and the tiger prawns (you can butterfly them first if you like).
    2. Toss the prawns for 3 to 4 minutes, or till cooked through. Remove from the heat and set aside.
    3. For the Marie rose sauce, combine the lemon juice with the remaining ingredients in a bowl and set aside.
    4. Shred the lettuce, dice the cucumber, thinly slice the tomato and pick the mint leaves, then layer in bowls or jars. Snip in most of the cress.
    5. Add the peeled prawns, dollop with marie rose sauce and finish with crabmeat, shrimps (if using) and more cress.
    6. Add a pinch of cayenne pepper and hang a hot prawn or two off the side of the bowl or jar. Serve with lemon wedges for squeezing over.

    1. Preheat the oven to 200ºC/400ºF/gas 6.
    2. Bring a large pan of salted water to the boil over a medium-high heat. Wash and trim the sprouts, then add to the pan and parboil for 3 minutes. Drain in a colander and set aside to dry.
    3. Toast the cumin and coriander seeds in a small frying pan over a medium heat for 3 minutes, or until fragrant. Using a pestle and mortar, finely grind the toasted seeds with a pinch of sea salt.
    4. Tip most of the spice mix into a large roasting tray and toss in the sprouts.
    5. Peel and slice the onions, then trim and slice the fennel. Tip into the tray along with a glug of oil.
    6. Spread everything in an even layer – you may need two trays – and cook for 20 minutes, until tender and starting to caramelise.
    7. Meanwhile, return your frying pan to the heat and toast the sesame seeds and hazelnuts for 3 minutes, then grind up with the remaining spices, using a pestle and mortar.
    8. Combine the yoghurt with the tahini. Peel and crush the garlic and stir through, then finely grate in half the lemon zest and squeeze in half the juice (save the rest for another day).
    9. Taste the yoghurt and season well, then spread it evenly over the base of a large serving platter and sprinkle some sumac over the top.
    10. Spoon the sprout mix on top of the yoghurt mixture, scraping up the lovely crispy bits in the pan. Sprinkle the ground nuts and seeds over the top.
    11. Pick and finely chop the herb leaves, discarding the stalks. Scatter the leaves across the plate, then serve.
