With fresh ginger root, water, and honey, you can make a tea that is soothing and delicious. Read on to learn how to make ginger tea from fresh ginger root.

1 1-inch piece fresh ginger root, scrubbed2 cups filtered water1 teaspoon dried oregano and/or rosemary, star anise optional1 to 2 tablespoons honey, to taste

Steps:

  • Slice the piece of ginger root thinly on a sharp diagonal, making about 4 or 5 slices total. Combine ginger and water (and optional dried herbs) in a small saucepan. Bring to a boil over medium-high heat; reduce to a simmer and cook, partially covered, until mixture is a dark color and smells strongly of ginger, about 10 to 15 minutes total. Strain mixture into a mug. Stir in honey to taste and enjoy. (You may also make this in larger quantities and store, covered, in the fridge for a few days. Enjoy chilled or gently reheated.)

Return the ginger and 1/4 cup water to the pan and add the sugar. Set over medium-high heat and bring to a boil, stirring frequently. Reduce the heat to medium and cook, stirring frequently, until the sugar syrup looks dry, has almost evaporated and begins to recrystallize, approximately 20 minutes. Transfer the ginger immediately to the cooling rack and spread to separate the individual pieces. Once completely cool, store in an airtight container for up to 2 weeks. Save the sugar that drops beneath the cooling rack and use to top ginger snaps, sprinkled over ice cream or to sweeten coffee.
