Easy Cantonese garlic oyster sauce broccoli stir fry

Number Of Ingredients 6

1 head broccoli ( , separated into florets)
1 tbsp. vegetable oil
2 garlic cloves ( , finely chopped)
pinch of salt
1/4 tsp. sesame oil
1/2 tbsp. oyster sauce ( , or 1/2 tbsp. light soy sauce + 1/8 teaspoon sugar)

Steps:

  • Bring enough water to a boil in a large pot, add pinch of salt and 1/4 teaspoon sesame oil and then cook broccoli for around 1 minute. Transfer out. (No need to drain)
  • Heat cooking oil in wok and fry chopped garlic until aroma over slow fire, then turn up the fire and slide broccoli in.
  • Add salt and oyster sauce, mix well. And serve warm.

Chinese broccoli with garlic and oyster sauce

250 g Chinese broccoli (, trimmed and cut into small sections)
1 tsp. oil
1/2 tsp. salt
3 cloves garlic ( ,roughly chopped)
2 tbsp. vegetable cooking oil
1 tsp. oyster sauce
1/2 tbsp. Chinese cooking wine
1/2 tbsp. sesame oil

Steps:

  • Trim Chinese broccoli, remove the hard skins and cut into sections with angle. Separate the leaves too.
  • Bring a large pot of water to a boiling and then add salt and vegetable cooking oil. Add the stem firstly (cook for 20 seconds) and then add the leaves to cook for 10 seconds. Transfer out and drain.
  • Add oil in already heated wok and fry the garlic until slightly seared. Place Chinese broccoli back, add cooking wine and sesame oil. Mix well quickly and serve immediately.

  • Heat the vegetable oil in a small saucepan over medium-high heat. Add the garlic and cook until just starting to colour (the garlic will continue cooking as it sits, so be sure to remove it from the heat before the garlic is golden brown). Use a fine slotted spoon or sieve to drain the garlic and transfer to some paper towel to drain. Transfer the garlic oil to a heat-proof bowl. Mix 2 tablespoons of the garlic oil with the oyster sauce, soy sauce, sesame oil, sugar and water. Set aside for later. To prepare the Chinese broccoli, cut off the leafy parts and set aside. Use a vegetable peeler or knife to peel the outer layer of skin off the stem parts. Heat a large pot of water over high heat. When boiling, add in the stems of the broccoli and cook for 2 minutes. Then add the leaves and cook for another minute. Drain the broccoli and transfer to a serving plate. Pour over the oyster sauce mixture and sprinkle generously with the fried garlic.
