Made this up one night when we we're having pizza and were all out of garlic bread. I always have a batch of garlic mayo in the fridge so, as the flavours were already good and mixed, I thought I'd give it a try instead of garlic butter. I make this with reduced fat butter and low fat mayo. Makes me feel slightly less naughty!

4 slices thick white bread
2 tablespoons garlic mayonnaise
butter

Steps:

  • NB. You could make this without pre-made garlic mayo, in which case I'd suggest 2 heaped tbsps of mayo and one large clove of garlic (minced/chopped).
  • Pre-heat oven to 200c.
  • Remove crusts from bread (if desired) and butter bread.
  • Spread 1/2 tbsp garlic mayo over each slice of bread.
  • Bake for approximately 10 minutes.

This recipe is adapted from several recipes I've seen on the net. Absolutely decadent! Perfect with fresh pasta or could also be served as an appetizer.

Number Of Ingredients 8

1 loaf French bread, split or sliced
1 cup mayonnaise
2 -3 cloves minced garlic
1/2 cup sweet onion, diced
1 cup grated cheddar cheese
3 tablespoons parmesan cheese
2 tablespoons fresh parsley, chopped fine
4 tablespoons half-and-half cream

Steps:

  • Mix mayonnaise and the next six ingredients in a small bowl.
  • Spread on the split or sliced french bread and bake in the broiler approximately 5-6 minutes or until golden brown and bubbly.

If you’re adding mozzarella, use the offset spatula or spoon to gently open each slit and tuck a piece of mozzarella in (it’s O.K. if the cheese pops out from the top a little). Return bread to the oven and bake until crisp and golden on top, another 5 minutes. Slice with a serrated knife (or tear with your hands) and serve at once.
