Michael's Great-Grandmother's Fry Cakes Recipe - Food.com image

My husband believe it or not makes this recipe. It has been handed down from his Great Grandparents!! **Note: you have to use real buttermilk liquid in this. I try it with powdered buttermilk and the recipe wasn't the same.

Number Of Ingredients 10

1 cup granulated sugar
3 tablespoons Crisco
1 teaspoon baking powder
1 teaspoon baking soda
3 1/2 cups flour
2 eggs
1 teaspoon ground cinnamon
1/2 teaspoon nutmeg
1 cup buttermilk
1 pinch salt

Steps:

  • Oil temperature should be at 375 degrees F.
  • Add baking soda to the buttermilk. Let set while preparing the next steps.
  • In a large bowl mix the sugar, crisco and egg.
  • Add the baking powder, ground cinnamon, nutmeg, and salt to the flour in small bowl.
  • Mix flour mixture and buttermilk alternately into egg mixture until mixture holds together. Add a little more flour if needed.
  • Turn dough onto a floured surface and knead until it springs back when pushed inches.
  • Roll out, cut with a doughnut cutter.
  • Drop in hot crisco, which has been heated to 375 F for about 3 minutes.
  • Turn the doughnuts after they come to the surface of grease (about 1 1/2 minutes) and cook other side (about 1 1/2 minutes).
  • Drain on paper towels.

Number Of Ingredients 17

2 egg whites
2 cups mayonnaise
1 tsp Old Bay seasoning
1 pinch cayenne pepper
2 tbsp extra fine cracker meal
1 lemon juice
1 lb Jack Fry's uses Dungeness crab fresh lump crab meat
5 oz 1 rock lobster tail will give about this much meat fresh lobster meat
1 cup breadcrumbs
½ stick margarine
1 diced shallot
2 cups white wine
2 cups reduced-sodium chicken broth
1 pint heavy cream
4 tbsp whole-grain Dijon mustard
optional lemon
optional mixed greens

Steps:

  • In a large bowl, blend the egg whites, mayonnaise, Old Bay seasoning, cayenne, cracker meal and lemon juice.
  • Fold in crab and lobster meat.
  • Divide into 10 portions, flatten gently and form into cake.
  • Coat in the breadcrumbs.
  • Pan-sear in margarine for 2 to 3 minutes on each side.
  • Combine shallot, wine, and broth.
  • Bring to a boil.
  • Reduce by half.
  • Add the heavy cream.
  • Reduce by a third.
  • Whisk in the mustard.
  • To serve, pool the sauce on a warm plate.
  • Place 2 crab cakes on top.
  • Garnish with lemon and mixed greens.
