1 tbsp olive oil
4 really good quality pork chops (200g each), bone in
40g unsalted butter
2 medium onions , finely chopped
1½ tbsp Dijon mustard
6 thyme sprigs , leaves picked
50g coarse white breadcrumbs

Steps:

  • Heat oven to 210C/190C fan/gas 7. Heat the oil in a frying pan and brown the chops all over, seasoning as you go. It’s important to brown the fat as well as the meat, so prop the chops up in the pan on their fatty bits so they get coloured too. You’re not cooking the chops all the way through. Transfer them to a shallow ovenproof dish in which they fit snugly in a single layer.
  • Heat the butter in the pan and sauté the onions over a low heat until they’re really soft and pale gold. This will take about 15 mins, so keep going. Stir the mustard and the thyme into the onions.
  • Spread the onion mixture thickly over each chop and press the breadcrumbs on top. Put in the oven for 20 mins, or until the tops are golden brown and the pork is cooked through.

Here's what you need: thick-cut pork chops, paprika, cayenne pepper, garlic powder, black pepper, salt, brown sugar, olive oil

4 thick-cut pork chops
½ teaspoon paprika
½ teaspoon cayenne pepper
½ teaspoon garlic powder
½ teaspoon black pepper
½ teaspoon salt
4 tablespoons brown sugar
olive oil, for frying

Steps:

  • In a bowl, combine your spices (paprika, cayenne pepper, garlic powder, black pepper, and salt).
  • Rub the pork chops in the spices generously.
  • Heat olive oil in an oven-safe skillet over medium/high heat. When the oil is hot, add the pork chops. Cook for about 3-5 minutes on each side or until they have a nice caramelized brownness to them. Once you feel that they are looking browned, add a Tablespoon of brown sugar to each pork chop. Turn each pork chop over, so both sides get some melted brown sugar. (Don’t add the brown sugar too early or else the sugar will burn and smoke up the room.)
  • Bake at 350˚F (175˚C) for 15 minutes, making sure the pork chops are cooked through.
  • Before serving, pour the glaze that’s formed in the pan over the chops. Serve with your vegetables of choice.

My fried pork chop recipe :) I came up with this after trying many recipes & not really finding the flavor I wanted for my pork chops. I will sometimes skip soaking as I don't always have time. Choose soak time wisely, as the longer they soak the harder it is to keep the breading from falling off due to excess moisture absorbed in the soaking process. I suggest boneless tho as they are easier to tenderize & will require less soak time to keep juicy. Bone in will take longer, but still work with this recipe. Parsley is optional, some people find that it burns too easily so you can omit & the flavor will not change much at all. I personally love this recipe with a side of Louisiana hot sauce for dipping, I find it compliments the flavor perfectly.
