1 tablespoon olive oil
1 medium sweet onion, halved and thinly sliced
1 log (4 ounces) fresh goat cheese, crumbled
1/4 cup finely chopped oil-packed sun-dried tomatoes, drained
Dough for single-crust pie or 1 sheet refrigerated pie crust
Cooking spray

Steps:

  • In a large skillet, heat oil over medium heat. Add onion; cook and stir until softened, 4-5 minutes. Reduce heat to medium-low. Cook, stirring occasionally, until deep golden brown, 30-40 minutes. Remove from heat. Let cool slightly. Gently stir in goat cheese and tomatoes., Preheat air fryer to 375°. On a lightly floured surface, roll dough to 1/4-in. thickness. Cut with a floured 3-in. round biscuit cutter. Place 1 heaping teaspoon filling on half of each circle. Brush edges of pastry with water; fold circles in half. With a fork, press edges to seal., In batches, arrange empanadas in a single layer on greased tray in air-fryer basket; spritz with cooking spray. Cook until golden brown, 4-5 minutes. Turn; spritz with cooking spray. Cook until golden brown, 4-5 minutes longer.

Crispy, crunchy air fryer empanadas are so easy to make at home without the mess or uncertain timing of deep-frying. Plus, they come out of the air fryer perfectly crisp and golden brown every time.

10 empanada discos (thawed)
1 1/4 cup chili (or another filling of your choice, like shredded chicken)
1 large egg
1 tablespoon water

Steps:

  • Place an empanada disco on a cutting board in front of you. Spoon 2 tablespoons of filling onto the disk, slightly off-center (see photos above). Fold the dough into a half-circle, encasing the filling side. Pinch the edges of the dough together to seal them, then crimp with a fork. Repeat with remaining dough/filling to form 10 empanadas.
  • In a small bowl, whisk together the egg and water. Brush onto the empanadas.
  • Place the empanadas into your air fryer in a single layer cooking them in batches if necessary. Fry at 330°F for 8-10 minutes, or until crisp and golden brown.

  • Let puff pastry dough sit for 15 minutes at room temperature.  Heat oil in a skillet over medium-high. Add beef and onion; cook and stir, breaking ground beef into crumbles, until starting to brown, about 3 minutes. Add red bell pepper; cook, stirring occasionally, until red bell pepper is starting to soften, about 4 minutes. Season ground beef mixture with cumin, paprika, oregano, salt, and ground black pepper. Drain oil and transfer ground beef filling to a bowl; let cool 5 minutes.  Cut puff pastry into rounds, about 6 inches in diameter. Preheat air fryer to 400°F (200°C). Place 1 to 2 tablespoons filling in the center of each puff pastry round. Brush water around half of outer edge of each round. Fold round over filling and pinch edges to seal. Using a fork, crimp edges. Repeat process with remaining wrappers and filling. Beat egg and 1 tablespoon water together in a bowl to form an egg wash. Brush each empanada with egg wash and spray with cooking spray. Place empanadas in single layer in air fryer basket and cook for 5 minutes. Flip empanadas and continue cooking until light golden brown, about 5 minutes more. Repeat with remaining empanadas.
