This is a clone for the famous English "Houses of Parliament" steak sauce & a must have recipe for all canadians living outside the country. I got it from a co-worker many years ago & haven't used the store-bought product since; however, I do keep my current supply in an old bottle for that authentic look (lol). If you prefer more of a bite, increase the tabasco!!

Prep Time 15 minutes

Cook Time 1 hours

Yield 4 cups

Number Of Ingredients 10

10 tomatoes, chopped
1 cup brown sugar
1 onion, chopped
1 lemon, sliced
1/4 cup white vinegar
1 tablespoon salt
1 tablespoon allspice
1 teaspoon pepper
1 tablespoon Worcestershire sauce
1/4 teaspoon hot sauce (I use Tabasco)

Steps:

  • Combine all ingredients in a dutch oven.
  • Bring to a boil, lower heat& cook, uncovered, for an hour, stirring occasionally.
  • Strain through a food mill& bottle in hot, sterilized jars.

5 cup plums pitted and diced
5 cup apples peeled, diced
1/2 cup water
1 onion diced
2 garlic cloves peeled and crushed
1 tsp fresh ginger grated
1 tbsp tamarid paste
1 tbsp tomato paste
1 tbsp ground allspice
1 tbsp ground nutmeg
1 tbsp peri peri powder
1 tbsp salt
2 tbsp Worcestershire sauce
1 tbsp Tabasco sauce
1 tbsp dark treacle
375 ml apple cider vinegar
375 ml brown sugar

Steps:

  • In a large saucepan put the plums, apples, water, onion and the ginger.Bring to a boil and then simmer gently for 30 minutes.Add the remaining ingredients and simmer for another hour or until it has reduced and you get a nice thick consistency.Allow to cool and then blend in a blender or use a stick blender. Pass through a fine sieve.Using a funnel pour into sterile glass jars/bottles (to sterilize, rinse in hot water and pop straight into the microwave for 1 minute on high)Leave in a dark place for at least 6 weeks, the flavour develops the longer you leave it and the colour darkens accordingly.Reprinted with permission of Sous Chef. This is great canned! It is very similar to the "real" stuff. I always have an abundance of apples and plums in season and it's a great way to use them up. The original recipe called for 4 1/2 cups of sugar but I found it too sweet so I reduced it. It can be used on meat, eggs, and for a dipping sauce.
