My friend Jane and I have a favorite lunch spot that serves a fantastic salad on Wednesdays. I made my own version at home so I can share it with my family and eat it whenever I want. Save a lot of prep time and buy peeled, deveined shrimp and pre-washed lettuce. —Marla Clark, Albuquerque, New Mexico

2 romaine hearts, coarsely chopped
1 cup cherry tomatoes, halved
1/4 cup shredded Parmesan cheese
1/2 cup all-purpose flour
3/4 teaspoon salt
1/2 teaspoon pepper
1 pound uncooked large shrimp, peeled and deveined
Oil for frying
1/2 cup creamy Caesar salad dressing
Additional shredded Parmesan cheese and pepper, optional

Steps:

  • In a large bowl, combine romaine, tomatoes and cheese; refrigerate until serving. In a shallow bowl, mix flour, salt and pepper. Add shrimp, a few pieces at a time, and toss to coat; shake off excess., In a deep skillet, heat 1/4 in. oil to 375°. Fry shrimp, a few at a time, 1-2 minutes on each side or until golden brown. Drain on paper towels., Drizzle dressing over romaine mixture and toss to coat. Top with shrimp. If desired, sprinkle with additional cheese and pepper; serve immediately.

Low in calories, shrimp is definitely to be considered if you’re looking to serve a light meal for dinner. It's delicious when cooked in a small amount of butter and flavored with a bit of garlic and Dijon mustard. Pair it with a light spinach and cherry tomato salad and dinner is ready!

Number Of Ingredients 12

1 tablespoon vegetable oil
2 garlic cloves
6 shrimp
0.5 ounce butter, melted
1 tablespoon whole grain dijon mustard
1 tablespoon lemon juice
salt
3 basil leaves
2 ounces of baby spinach
3 sun-dried tomatoes es
4 cherry tomatoes, halves
1 tablespoon olive oil

Steps:

  • Heat 1 tablespoon of vegetable oil in a skillet over medium heat.
  • Add the garlic cloves and cook them for 1 minute. Add the shrimp and melted butter. Add the Dijon mustard, lemon juice, salt, and fresh basil. Cook the shrimp for 3 minutes.
  • Separately, add the baby spinach in a large bowl. Add the cherry tomatoes and the sun-dried ones.
  • Add olive oil and season with salt.
  • Place the salad on a plate and top it with the butter-fried shrimp.
