This recipe is from "Green Hills Garden Club Cooks...Favorite Recipes from Vicksburg, MS" (June Hebler). Excellent side dish!

1 (10 3/4 ounce) can French onion soup
1 (10 3/4 ounce) can beef consomme
1 cup long-grain white rice, uncooked
1/2 cup butter
salt and pepper, to taste

Steps:

  • Place rice in a 9x13-inch casserole dish.
  • Mix French onion soup and consomme; pour over rice.
  • Cut butter in pats and place in dish.
  • Bake 1 hour at 350 degrees.
  • Check it at 40 minutes.
  • I added cheese on the top when I made this dish. Yummy!

I found these basic instructions for cooking Bhutanese red rice at Sugat.com. Goes very well with Zesty Corn and Beans.

1 cup red rice
1 tablespoon olive oil
2 cups water

Steps:

  • Rinse red rice in water.
  • Heat oil in a pot, add rice and stir for 2 minutes.
  • Add water and bring to a boil.
  • Lower heat and cover pot. Cook for 45 minutes or until liquid is absorbed.
  • Remove from heat and let rest for 10 minutes.

1 cup plus 2 tablespoons Camargue red rice. 4 tomatoes. 2 red bell peppers. 3 onions. 1 can salted anchovy filets. 2 ounces green olives. 2 ounces black olives. 1 branch fresh thyme. 1 bay leaf. vinaigrette (bottled store-bought or your own) salt and pepper . Bring to a boil three and a half cups of salted water. Add the rice, thyme, bay leaf and one chopped onion. Let cook at a low boil for 30 minutes. Rinse the rice with cold water and drain.
