Treat someone to this flourless chocolate cake. It’s ideal for anyone following a gluten-free diet, and makes an irresistible dessert with fresh berries

225g salted butter , cubed, plus more for the tin
300g dark chocolate , roughly chopped
1 tbsp coffee powder
6 large eggs , whites and yolks separated
100g soft light brown sugar
200g caster sugar
2 tsp vanilla paste
30g cocoa powder
berries , to serve (optional)

Steps:

  • Heat the oven to 160C/140C fan/gas 3. Butter a 23cm springform cake tin and line the base with baking parchment.
  • Melt the butter and chocolate in a medium heatproof bowl in the microwave or over a pan of gently simmering water. Mix the coffee powder with 2 tbsp hot water until dissolved. Stir the coffee into the chocolate and set aside to cool slightly.
  • Whisk the egg whites in a large bowl for 2 mins with an electric whisk until soft peaks form. In another large bowl, whisk both the sugars, the vanilla and egg yolks for 5-8 mins, or until pale and fluffy. Sift the cocoa powder into the egg yolk mixture and mix gently to combine.
  • Stir the cooled chocolate into the egg yolk mixture, then gently fold through the egg whites until smooth. Transfer to the tin and bake for 1hr-1hr 20 mins, or until a skewer inserted into the middle of the cake comes out clean. Allow to cool, remove from the tin and serve with fresh berries, if you like.

A truly moreish gluten-free flourless chocolate cake, pile this one high with fruit and cream. That's what the sunken middle was made for.

300g/10½oz dark chocolate, broken into pieces
225g/8oz caster sugar
175ml/6fl oz boiling water
225g/8oz salted butter, cut into cubes, plus extra for greasing
6 free-range eggs, separated
1 tsp instant coffee powder
2 tsp vanilla extract
200ml/7fl oz crème fraîche
255g/9oz summer berries
1 tbsp plain chocolate, grated
Icing sugar, to dust

Steps:

  • Preheat the oven to 180C/350F/Gas 4.
  • For the cake, grease and line the base of a 23cm/9in springform tin with baking parchment.
  • Blend the chocolate and sugar in a food processor until a fine powder forms. Add the boiling water, butter, egg yolks, coffee powder and vanilla extract and blend until well combined.
  • In a clean bowl, whisk the egg whites until stiff peaks form when the whisk is removed, then, using a metal spoon, gently fold into the chocolate mixture.
  • Pour the mixture into the prepared cake tin and bake for 45-55 minutes, or until a skewer inserted into the middle comes out clean.
  • Remove the cake from the oven and allow to cool in the tin, then transfer to the fridge for 2-3 hours.
  • To serve, remove the cake from the tin and place on a serving plate or cake stand, spread the crème fraîche on top, then scatter over the berries. To decorate, grate some chocolate over the top, or dust with icing sugar.
