18 ounces (500 g) white fish fillets, skinned
1 egg
1/2 teaspoon ginger juice
2-3 teaspoons cornstarch
salt to taste

Steps:

  • Grind the fish fillets in a food processor. Add egg, ginger juice, cornstarch and salt. Mix well.
  • Divide into halves. Brush 2 12? x 10? sheets of aluminum foil with oil.
  • Shape kamaboko paste into logs approximately 4.5? in length and 2? in diameter.
  • Roll up and seal both ends. Steam for 30 minutes over high heat.
  • Test for doneness by inserting a skewer into the center of the log. If it comes out clean, then it’s done.

2 lb Any white fish *
2 tb Dry sherry
2 Green Onions chopped
2 tb Light soy sauce
1 Pieces fresh ginger; grated
salt and pepper to taste
1 tb Sesame oil
1 Egg

Steps:

  • "Carefully remove all bones from the whitefish. Place the fish pieces in a food processor, grind to a smooth paste. Scrape the paste into a bowl and add the other ingredients. Mix them in carefully to complete. Makes 1-3/4 lbs. * If you put in a piece of salmon it will add great flavour! NOTES : The paste below is not a Scottish dish; its Chinese. Its included because Scotch Toast calls for it and most of the commercial fish or bloater pastes available are mediocre. Scottish cooking has a long tradition of borrowing from other cultures and this recipe is being borrowed from China because its easily made, versatile, has no fishy flavour and most importantly, is delicious! "
