Pastry
2 cups all-purpose flour
1/4 cup sugar
1/2 teaspoon salt
1 cup cold Land O Lakes® Butter cut into pieces
4 to 6 tablespoons cold water
Fig Filling
1 (7-ounce) package dried figs, stems removed, finely chopped
1/3 cup firmly packed brown sugar
1/3 cup orange juice
1 teaspoon freshly grated orange zest
1/4 teaspoon ground cinnamon
Land O Lakes® Butter melted
Coarse grain white sugar

Steps:

  • Combine flour, sugar and salt in bowl. Cut in butter with pastry blender or fork until mixture resembles coarse crumbs. Mix in enough water just until flour is moistened and forms dough.
  • Shape dough into ball; flatten slightly. Wrap in plastic food wrap. Refrigerate 1 hour.
  • Combine figs, brown sugar, orange juice, orange zest and cinnamon in saucepan. Cook over medium heat until mixture comes to a boil. Reduce heat to low; cook 4-6 minutes or until figs have absorbed most of the liquid.
  • Place fig mixture into food processor bowl; process until smooth. Transfer mixture to bowl; cool completely.
  • Heat oven to 375°F. Line baking sheet with parchment paper; set aside.
  • Roll out dough on floured surface to 13x9-inch rectangle. Trim; cut in half to form 2 (12x4-inch) rectangles. Place onto prepared baking sheet.
  • Spread 1 inch wide ribbon of filling (thickness should be just under 1/4 inch) lengthwise down center of rectangle.
  • Lift long edges of dough up and over filling using knife. Press seam together; turn pastry over. Brush generously with melted butter. Sprinkle with sanding sugar. Trim ends; cut into (3/4 inch) slices.
  • Place slices onto prepared baking sheet, seam-side down. Bake 15-18 minutes or until golden brown.

4 cups all-purpose flour
3/4 cup shortening
1/4 teaspoon salt
1/3 cup sugar
1/2 cup warm water
1 large egg, lightly beaten
1/4 teaspoon vanilla extract
FILLING:
8 ounces dried figs, chopped
2/3 cup chopped walnuts
1 tablespoon water
1 tablespoon grape jelly
1/2 teaspoon grated orange zest
1/8 teaspoon ground cinnamon
1 large egg, lightly beaten
2 tablespoons sugar

Steps:

  • In a food processor, combine the flour, shortening and salt; cover and process until mixture resembles coarse crumbs. In a small bowl, dissolve sugar in warm water; stir in egg and vanilla. Gradually add to crumb mixture; pulse until dough forms a ball. Cover and let rest for 10 minutes., In a food processor, combine the figs, walnuts, water, grape jelly, orange zest and cinnamon; cover and process until blended. Set aside. , Separate dough into six portions. On a lightly floured surface, roll each portion into a 12x8-in. rectangle (dough will be very thin). Cut into 4x2-in. rectangles. Place a teaspoon of fig mixture on one short side of each rectangle; fold dough over filling. Press edges with a fork to seal. , Place 1 in. apart on ungreased baking sheets. Brush with egg and sprinkle with sugar. Bake at 375° for 15-17 minutes or until golden brown. Remove from pans to wire racks.

  • Fig filling: (This can be prepared a day before) Rinse the figs and cut them in half. Take the flesh out using a tea spoon and place it in a bowl. Melt the butter in a pan, add the figs, cinnamon and sugar. Stir well. Simmer on low heat for about 5 minutes until the mixture has a “mushy” look. Add lemon juice & taste. If you are happy with its taste, remove from the stove and let it cool down. Place in a fridge for 1 hour or overnight. Fig roses: Cut the pre-rolled puff pastry into squares (preferably 8-9 cm wide). Take one square & using a small knife, make diagonal cuts in all 4 corners. Cut towards the centre but make sure to not cut through the centre. Repeat with all of them Place a tea spoon of fig filling in the middle of the square. Using both hands, grab 2 corners that are further apart & bring them towards the middle creating a “wall” around the filling. Press down to secure the corners. Repeat with the opposite side. Secure the corner by pinching them with your finger and tucking them under the pastry – now you should create a rose like shape. Place the roses on a baking tray lined with baking paper, brush with egg wash. Bake in a preheated oven for 15 minutes (or until golden brown around the edges) at 200C. Once they are ready, let them cool down for a few minutes, then sprinkle with icing sugar. Tip: These pastries are best served warm!

Continue to simmer over moderate heat until the mixture reaches a thick jam like consistency, about 20 minutes. Trim edges of pie crust so that you have an even rectangle (approximately 9 x 8 inches, depending on size of pie crust). Discard trimmings. Press the border down all around the pastry pocket to seal it well and use a fork to score all four edges. Use a sharp knife to slice air pockets in the top. Repeat all steps to make more pastry pockets. Place them in the freezer for 15 minutes while you preheat oven to 425 degrees F. Lightly spray pockets with cooking spray before you place into oven. Bake for 15-20 minutes until golden. Use any leftover fig compote on toast or crackers!
