JALFREZI | RECIPES | JAMIE OLIVER

Jalfrezi | Recipes | Jamie Oliver image

Whether you have cauliflowers coming out of your ears or a wide variety of veg to use up, this recipe will see you right. It’s great with crunchy peppers, so feel free to chuck some in if you have any available. To make it suitable for vegetarians, simply swap out the meat for chickpeas (or another tinned pulse of your choosing).

Total Time 1 hours

Yield 10

Number Of Ingredients 10

500 g chicken, lamb or beef
500 g alliums (onion, leeks or a mixture of both)
30 g ginger
30 g green chillies or 2 teaspoons chilli powder
30 ml vegetable oil
2 tablespoons curry powder
1 kg mixed veg (Mediterranean, root, leafy)
500 ml curry base sauce
500 ml tomato base sauce
lemon juice to taste

Steps:

    1. Recipe kindly shared by the Tesco Community Cookery School with Jamie Oliver. The recipe has been written to be flexible and scalable up to 50 portions. Note: all veg weights are for trimmed, prepped vegetables.
    2. Cut the chicken, lamb or beef into bite-size chunks.
    3. Peel (or trim) and finely chop the alliums and ginger. Finely chop and deseed the chillies (if using).
    4. Place a pan large enough to hold all the ingredients on a medium heat with the oil.
    5. Add the alliums, ginger, chillies or chilli powder, meat and curry powder. Cook for 15 to 20 minutes or until the meat and veg is golden and softened, stirring frequently.
    6. Meanwhile, roughly chop your mixed veg, keeping any leafy greens (if using) to one side for later.
    7. Add the chopped veg (except the leafy greens, if using) to the pan and cook with a lid on for a few minutes, or until softened.
    8. Note the liquid level in the pan, then pour in the curry and tomato sauces and 750ml of water.
    9. Bring to the boil, then reduce the heat and simmer for 35 minutes.
    10. Check that the meat is cooked through and tender – if not, add a splash more water and continue cooking until soft.
    11. Add the reserved leafy veg (if using). Bring back to the boil, and cook until the curry has reduced – the liquid should return to the same level as in step 8.
    12. Season to taste with lemon juice, sea salt and black pepper.

Total Time 20 minutes

Yield 1.5 litres

Number Of Ingredients 10

200 g caster sugar
6 cloves
3 star anise
1 cinnamon stick
2 bay leaves
2 oranges
1 lemon
2 x 750 ml bottles of red wine
100 ml crème de cassis
1 whole nutmeg for grating

Steps:

    1. Place the sugar and all of the spices (except the nutmeg) into a large, heavy-bottomed pan.
    2. Add the bay leaves and use a speed peeler to pare the zest of the lemon and oranges. Add to the pan, slice the oranges in half and squeeze in the juice.
    3. Pour in just enough of the wine to cover all the ingredients. Place the pan over a medium heat, bring to the boil, then lower the heat and simmer for 5 minutes, or until all of the sugar is dissolved and you have a lovely fragrant syrup.
    4. Add the rest of the wine and the crème de cassis, then gently heat for 10 minutes, until warm and fragrant. Be careful not to let the mixture boil. Serve hot, with fresh nutmeg grated on top, and mince pies.
