AIR FRYER BEEF EMPANADA RECIPE - SKINNYTASTE
These easy beef empanadas made with my homemade beef picadillo filling and store bought empanada dough are "fried" in the air fryer for empanadas that area ready in minutes (only takes 8 minutes to cook)!

Steps:
- Preheat the air fryer to 325F for 8 minutes. Spray the basket generously with cooking spray.
- Place 2 tbsp of picadillo in the center of each disc. Fold in half and use a fork to seal the edges. Repeat with the remaining dough.
- Whisk the egg whites with water, then brush the tops of the empanadas.
- Bake 2 or 3 at a time in the air fryer 8 minutes, or until golden. Remove from heat and repeat with the remaining empanadas.

Crispy, crunchy air fryer empanadas are so easy to make at home without the mess or uncertain timing of deep-frying. Plus, they come out of the air fryer perfectly crisp and golden brown every time.

Steps:
- Place an empanada disco on a cutting board in front of you. Spoon 2 tablespoons of filling onto the disk, slightly off-center (see photos above). Fold the dough into a half-circle, encasing the filling side. Pinch the edges of the dough together to seal them, then crimp with a fork. Repeat with remaining dough/filling to form 10 empanadas.
- In a small bowl, whisk together the egg and water. Brush onto the empanadas.
- Place the empanadas into your air fryer in a single layer cooking them in batches if necessary. Fry at 330°F for 8-10 minutes, or until crisp and golden brown.

- "In a skillet, heat oil on medium heat. Stir in ground meat and cook just till sizzling and half browned. Stir in the remaining ingredients, (except cheese, egg, discos and frying oil). Lower heat and simmer for 10-15 minutes until mixture thickens. With your thawed Goya discos, spoon about 1 tbsp of the mixture into the middle with a sprinkle of cheese, fold-over and moisten edges with the egg and seal with a fork. Heat 2 1/2 inches of oil in a deep sauce pan on medium heat. Cook empanadas in batches, turning till lightly browned on both sides. Drain on paper towels and enjoy one of my favorite foods on earth!"
