Soy Sauce Eggplant recipe - Simple Chinese Food image

Soy sauce eggplant is a kind of delicacy made with eggplant as the main ingredient. It is simple to make and suitable for all ages. It tastes salty and sweet. It uses small tricks to reduce the oil absorption of eggplant and makes it healthier to eat.

1 piece Eggplant (round)
4 petals garlic
1 tbsp Sweet noodle sauce
2 scoops Sugar
a little salt
2 tablespoons starch

Steps:

  • Cut the garlic into fine pieces and set aside
  • Add sugar and water to the sweet noodle sauce and mix evenly.
  • Cut the eggplant with the skin into hob pieces
  • After mixing well with salt, put it in a basin and sprinkle with starch and shake well (each piece should be covered with starch)
  • Add oil to the wok and heat up, add the eggplant pieces in batches and fry them into golden brown to remove the oil control
  • Heat in another pot without adding oil to the fire, pour in the fried eggplant and stir fry quickly
  • Look, a lot of oil comes out, and after the oil comes out,
  • Save the oil and sauté a little minced garlic
  • Pour the juice into a bowl and boil
  • Pour in the eggplant and fry until the sauce is slightly thick and shiny
  • Pour in all the minced garlic and stir well to get out of the pot

½ cup water
1 tablespoon plus 2 teaspoons lower-sodium soy sauce
1 tablespoon light brown sugar
2 teaspoons white miso
1 teaspoon toasted sesame oil
1 pound Japanese eggplant, sliced crosswise into 2-inch pieces
1 tablespoon canola oil
3 scallions, sliced into 1-inch pieces (about 1/2 cup)
1 large jalapeño chile, seeded and sliced lengthwise
2 medium garlic cloves, finely chopped
2 teaspoons finely chopped fresh ginger
2 tablespoons torn fresh cilantro leaves
1 tablespoon thinly sliced unseeded red Fresno chile (from 1 chile)

Steps:

  • Stir together water, soy sauce, brown sugar, miso and sesame oil in a small bowl until smooth; set aside.
  • Heat a large (12-inch) cast-iron skillet over high until smoking. Add eggplant and canola oil to skillet; cook until eggplant is well browned, 2 to 3 minutes, stirring once during cook time. Add scallions, jalapeño, garlic and ginger; cook, undisturbed, until scallions slightly char, about 1 minute. Stir mixture in skillet.
  • Add reserved soy sauce mixture to skillet; stir to coat eggplant. Cover and cook over high until sauce is thickened and eggplant is tender, about 1 minute. Remove from heat; transfer mixture to a serving dish. Sprinkle with cilantro and Fresno chile.
