An easy lasagna recipe using egg noodles instead of the traditional lasagna noodles. This is a great 'clean out the cupboard & fridge' recipe! The original recipe calls for mascarpone instead of the ricotta (which I use). Use mascarpone if you wish...it's just always easier for me to find ricotta at the store. You could also use cream cheese instead of ricotta.

1 (8 ounce) package wide egg noodles
1 lb lean ground beef
6 green onions, sliced
2 large garlic cloves, minced
3/4 teaspoon salt, divided
1 (26 ounce) jar tomato and basil pasta sauce
1/8 teaspoon pepper
1 (8 ounce) package ricotta cheese
1 cup sour cream
1/2 cup shredded parmesan cheese

Steps:

  • Cook ground beef, green onions, garlic and 1/2 teaspoons salt in a large nonstick skillet over medium-high heat, stirring 10 minutes or until it crumbles and is no longer pink. Drain well.
  • Stir in tomato-basil pasta sauce and pepper. Cover, reduce heat and simmer 20 minutes.
  • While meat sauce is simmering, prepare egg noodles according to package directions. Drain noodles. Stir together noodles, ricotta cheese, 1 cup sour cream and remaining 1/4 teaspoons salt until blended.
  • Layer half each of egg noodle mixture and ground beef mixture, starting with noodles, in a lightly greased 2-quart baking dish. Repeat layers.
  • Bake at 350-degrees for 25 minutes. Remove from oven; sprinkle evenly with parmesan cheese and bake 5 more minutes.
  • Let stand 10 minutes before serving.

8 ounces egg noodles
1 pound ground beef
26 ounces spaghetti sauce
24 ounces large curd cottage cheese
1 cup Parmesan cheese
3 cups mozzarella cheese
1 teaspoon garlic powder
3 tablespoons dried parsley
2 teaspoons basil
2 teaspoons salt

Steps:

  • 1. Boil egg noodles in a large pot of water until al dente. Drain and set aside.
  • 2. While noodles are cooking, brown ground beef. Season with salt while cooking. Drain fat.
  • 3. Add parsley to cottage cheese and stir until well combined. Set aside.
  • 4. Add spaghetti sauce to ground beef. Season with salt and basil. Simmer for 15 minutes.
  • 5. Spray 9×13 baking dish with nonstick spray.
  • 6. Pour 1/2 of cooked noodles to baking dish, covering the bottom as much as possible.
  • 7. Sprinkle 1/2 of mozzarella cheese on top of bottom layer of egg noodles.
  • 8. Pour ground beef and sauce mixture on top, spreading evenly.
  • 9. Sprinkle parmesan cheese on top of ground beef and sauce mixture.
  • 10. Drop cottage cheese by the tablespoonful and spread evenly on top of ground beef and sauce layer.
  • 11. Top with remaining egg noodles.
  • 12. Cover with remaining mozzarella cheese. Add a little of parmesan and parsley on top if you like.
  • 13. Cover dish with aluminum foil and bake at 400ºF for 30 minutes. Allow to cool, slice and serve!
