Easy Slow Cooker Pulled Pork

1 x 1.6kg boneless pork shoulder joint, rind and skin removed
2 teaspoons dried mixed herbs
1 x 300ml bottle prepared BBQ sauce of your choice
1 x 330ml can sweetened cola (not diet)

Steps:

  • Put the joint on a chopping board and pat dry with kitchen paper. With a sharp knife make several slashes over the joint. Season all over with salt, pepper and mixed herbs. Pour the BBQ sauce and the cola into the base of the slow cooker and stir well. Add the pork joint and spoon over the sauce. Cover and cook for 4-6 hours on HIGH or 8-10 hours on LOW, or according to the manufacturers instructions for your slow cooker. 'Pull' the cooked pork apart in the slow cooker by securing with a fork and shredding the meat with a second fork and use as required. 1 onion, finely chopped
3/4 c. ketchup
3 tbsp. tomato paste
1/4 c. apple cider vinegar
1 tsp. paprika
1 tsp. garlic powder
1 tsp. mustard powder
1 tsp. cumin
1 (3- to 4-lb.) pork shoulder, trimmed of excess fat
Kosher salt
Freshly ground black pepper
Coleslaw, for serving
Buns, for serving

Steps:

  • Combine onion, ketchup, tomato paste, apple cider vinegar and spices in the bowl of a slow cooker. Season pork shoulder all over with salt and pepper then add to slow cooker, covering it with ketchup mixture. Cover and cook until very tender (the meat should fall apart easily with a fork!), on HIGH for 5 to 6 hours or on LOW for 8 to 10 hours. 
  • Remove pork from slow cooker and transfer to bowl. Shred with two forks and toss with juices from the slow cooker. Serve on buns with coleslaw.
