Daisy Cottage Cheese
lean ground beef
prepared marinara sauce
eggs, beaten
grated Parmesan cheese
dried basil
garlic powder
onion powder
shredded mozzarella cheese
no-boil lasagna noodles*

Steps:

  • Preheat the oven to 350 degrees.
  • Drain the cottage cheese in a fine mesh strainer.
  • Brown the ground beef in a skillet over medium heat until no longer pink. Add the prepared pasta sauce; set aside.
  • In a medium bowl mix the beaten eggs, drained cottage cheese, Parmesan cheese, basil, garlic powder, onion powder, and 1 1/2 cup of mozzarella cheese.
  • Starting with the sauce, layer the sauce, noodles, and cheese mixture in a 9x13 inch baking dish. (Noodles will not completely cover sauce – they swell as they cook.) Repeat the layers twice.
  • Slightly press the noodles down into the sauce and then top with the remaining mozzarella cheese.
  • Bake for 40-45 minutes or until brown and bubbly. Let the lasagna stand for 15 minutes before serving to aid in slicing.
  • *There are several brands of no-boil lasagna noodles, varying in size. Use enough noodles to make 3 layers.

1-1/2 cups 4% cottage cheese
1 large egg
1/4 cup grated Parmesan cheese
1 tablespoon minced fresh parsley or 1 teaspoon dried parsley flakes
1/2 teaspoon dried oregano
1/4 teaspoon dried basil
9 lasagna noodles, cooked, rinsed and drained
4 cups Three-Meat Sauce
2 cups shredded part-skim mozzarella cheese

Steps:

  • In a large bowl, combine the cottage cheese, egg, Parmesan cheese, parsley, oregano and basil. In a greased 13x9-in. baking dish, layer a third of the noodles, sauce, cottage cheese mixture and mozzarella. Repeat layers twice. , Cover and bake at 350° for 30 minutes; uncover and bake 15-20 minutes longer or until bubbly. Let stand for 15 minutes before cutting.
