400 grams duck legs (breast and/or leg)
100 grams Duck liver
clarified butter (for frying)
100 grams fatty Bacon
100 grams Pork butt
2 red onions
1 garlic
1 tablespoon butter
2 egg yolks
60 milliliters Crème fraiche
2 scallions
2 teaspoons pumpkin pie spice
1 tablespoon Port wine
1 tablespoon Brandy
salt
freshly ground peppers
marjoram
100 grams fatty Bacon (thinly sliced)
1 tablespoon Juniper berries

Steps:

  • Preheat the oven to 160°C (approximately 320°F). Prepare a loaf pan and fill a deep roasting pan with water. Place roasting pan in oven.
  • Cut duck into pieces. Heat butter in a pan and brown duck on all sides. Remove from pan, set aside and let cool. Slightly fry duck liver and set aside.
  • Process bacon, pork and duck (except liver) meat through a meat grinder. Let cool.
  • Peel and mince onions and garlic. Rinse and slice scallions. Heat butter in a pan and cook onion and garlic. Let cool, then add to meat. Add yolks, crème fraîche, scallions, pie spice, port wine and brandy. Season with salt, pepper and marjoram. Knead to form a smooth dough.
  • Line loaf pan with bacon. Add half the filling, then add liver. Add remaining filling and top with remaining bacon and juniper berries. 
  • Cover pan with aluminum foil and cook for about 1 hour in a water bath. Remove, uncover and allow to cool. Serve warm.

This tasty meatloaf is seasoned just right. It makes 2 loaves. Great for a large gathering. Serve with mashed potatoes and a side salad.

- 3 lbs. ground chuck
- 2 celery ribs, finely chopped
- 1 medium onion, finely chopped
- 3 garlic cloves, finely chopped
- 1 small green pepper, finely chopped
- 2 large eggs
- 1 tablespoon cajun seasoning
- 1 tablespoon black pepper
- 12 oz. can tomato paste
- 2 tablespoons evaportated milk
- 2 sleeves ritz crackers, crushed
- 2 (8 oz.) cans tomato sauce, for topping
- 4 slices bacon, cut in half crosswise

Steps:

  • Heat oven to 375.
  • In large bowl, mix together (with your hands) meat, celery, onion, garlic, green pepper, eggs, Cajun seasoning, black pepper, tomato paste, milk, and 2 cups crushed crackers. Divide between 2 (9x5) loaf pans. Spread tomato sauce on top of each loaf. Sprinkle remaining crushed crackers on top of sauce. Top the loaves with bacon.
  • Bake 1 hour and 10 minutes, until set and the juices run clear when poked with a fork. Let cool a little before slicing.
