This unique, creamy corn salad is loaded with shredded cheddar cheese and Chili Cheese Fritos!

2 (15 oz.) cans whole kernel corn, drained
1 1/2 cups grated cheddar cheese
1 cup chopped red bell pepper
1/4 cup chopped green onion
1/2 cup mayonnaise
1/2 cup sour cream
1 (10.5 oz.) bag coarsely crushed Chili Cheese Fritos corn chips
Salt and pepper, to taste

Steps:

  • In a large bowl, toss together corn, cheese, red pepper and green onion. Stir in sour cream and mayonnaise.
  • Stir in corn chips just before serving. Season with salt and pepper, to taste.

How to Make Fresh Corn Casserole - The Pioneer Woman image

Four ingredients are all you need to whip up this winner of a fresh corn casserole recipe. It's so easy to make!

8 ears corn, still in the husk
2/3 c. heavy cream
3 tbsp. butter (salted)
1/2 tsp. salt, to taste
Ground pepper, to taste

Steps:

  • Remove the corn from the husks. In a large, deep bowl, slice off the kernels of corn. With the dull side of the knife (or a regular dinner knife), press and scrape the cob all the way down to remove all the bits of kernel and creamy milk inside. Add heavy cream, salt to taste, a generous amount of ground pepper and butter; mix well. Pour mixture into a baking dish. Bake at 350Fº for 30 to 45 minutes or until thoroughly warmed through.
