Quick and easy Thai noodles make a tasty meal. You can easily change the ingredients to suit your own tastes. Different veggies can be added or substituted such as mushrooms, snow peas etc

Yield 1 platter of Thai noodles

Number Of Ingredients 12

8 ounces flat rice noodles
2 tablespoons kikoman soy sauce
1 tablespoon oyster sauce
1 teaspoon brown sugar
1 tablespoon canola oil
1 cup diced extra firm tofu
2 teaspoons minced garlic
1 sliced Thai chiles or thai chili paste (just use very little the first time and then you'll know how much to increase or decrease it by the)
1 1/2 cups sliced broccoli
1/2 cup thinly sliced red onion
1 cup bean sprouts
1 cup Thai basil (you can use regular basil leaves in its place if you can't find this ingredient but it will give it)

Steps:

  • Soak noodles for 15 minutes in warm water.
  • In a large pot of boiling water, cook rice noodles until just tender, about 1 minute; drain and set aside.
  • In a small bowl, combine the Kikoman sauce, oyster sauce and sugar and put it aside.
  • Heat oil in a large skillet or wok over medium-high heat.
  • Add tofu and cook until its a golden colour which should take about 30 seconds to a minute and set this aside.
  • Add garlic and cook 10 seconds.
  • Add chili, broccoli, onion and stir fry for 30 secs.
  • Add the soy sauce mixture, noodles, sprouts, basil and reserved tofu and stir-fry for 1 minute, or until hot.
  • Serve in a serving platter.

Number Of Ingredients 16

Sauce
5 tablespoons sweet soy sauce*
3 tablespoons vegetarian oyster sauce*
3 tablespoons Maggi sauce*
1 tablespoon sugar
2 teaspoons sriracha sauce
2 cloves minced fresh garlic
6-8 basil leaves cut into thin strips**
3 tablespoons peanut oil
2-3 cloves of garlic, minced
1-2 serrano peppers, thinly sliced
5 ounces extra firm tofu, cut into bite-sized chunks
1/2 medium white onion, sliced
3-4 cups fresh rice noodles*
1/2 cup grape tomatoes, halved
1 cup torn basil leaves, loosely packed**

Steps:

  • First combine all the ingredients for the sauce in a glass and set that shit aside. When your ready to get cooking, heat the oil over a medium-high heat in a large saute pan. When the pan starts to slightly smoke, add the garlic and saute until it starts to brown. Stir in the peppers, diced tofu, and onions, folding constantly until the tofu starts to get a little golden, 1-2 minutes. Add the fresh rice noodles and saute until they are soft and slightly browned on the edges, about 2 minutes. Add the sauce, tomatoes, and basil and toss them together to combine for about 3-5 minutes. Makes sure the noodles completely absorb the sauce and then serve right way. * try your local thai market for this stuff, like Bangkok Market here in LA. Still can’t find it? You can def get it all online. ** you wanna try and use Thai basil here but you can just use the stuff you find at neighborhood grocery store in a pinch.

  • To Prep First, combine all the ingredients for the stir-fry sauce in a bow and set aside. This amount ingredients used is sufficient for 4 serves, extra sauce can be kept in the fridge for a month, and can be used for other stir fries. Using a mortar and pestle, pound the garlic and chillis until you get a rough paste. To Cook In a wok or large pan, heat some vegetable oil over high heat. When the oil begins to smoke, add the pounded garlic and chillis. Fry until the garlic begins to brown. Add your meat to the wok and stir fry until almost cooked. Then add your baby corn and asparagus. When the vegetables are done, add your noodles, stir fry sauce and sugar. Using some wrist action, toss the noodles in the wok to evenly coat with the stir fry sauce. Add the black soy sauce and toss again to mix. Mix the noodles around a few more times until the sauce is absorbed. When the noodles are done, remove from the heat and quickly mix in the Thai basil to wilt them. Transfer to a serving plate and serve hot.
