CREAM CHEESE SUGAR COOKIES RECIPE | ALLRECIPES
A soft, chewy, and flavorful sugar cookie. It is very important to chill the dough, as it is too sticky to roll unless well chilled.

Steps:
- In a large bowl, combine the sugar, butter, cream cheese, salt, almond and vanilla extracts, and egg yolk. Beat until smooth. Stir in flour until well blended. Chill the dough for 8 hours, or overnight.
- Preheat oven to 375 degrees F (190 degrees C).
- On a lightly floured surface, roll out the dough 1/3 at a time to 1/8 inch thickness, refrigerating remaining dough until ready to use. Cut into desired shapes with lightly floured cookie cutters. Place 1 inch apart on ungreased cookie sheets. Leave cookies plain for frosting, or brush with slightly beaten egg white and sprinkle with candy sprinkles or colored sugar.
- Bake for 7 to 10 minutes in the preheated oven, or until light and golden brown. Cool cookies completely before frosting.

HOW TO MAKE HOMEMADE "AMERICAN" CHEESE
Adapted from a recipe at America's Test Kitchen... I have never attempted to make my own cheese. It’s been on “my list” of things I want to eventually try, but fairly far down because I figured it was pretty complicated. That was until I ran across a recipe for American Cheese that sounded quite easy!

Steps:
- Line 5 x 4-inch disposable aluminum loaf pan with plastic wrap, allowing excess to hang over sides.
- Mix water and gelatin in a small bowl and let sit for 5 minutes.
- Combine cheese, milk powder, salt, and cream of tartar in a food processor and pulse a couple of times until combined.
- Bring the milk to a boil in a small saucepan and remove from heat, then stir in the softened gelatin until dissolved.
- With the food processor running, slowly add hot milk mixture to cheese mixture until smooth, about 1 - 2 minutes, scraping down the bowl as needed.
- Immediately transfer cheese mixture to prepared pan. Wrap tightly and chill at least 3 hours.
