Puffed Millet Bars, a quick and healthy snack for kids to enjoy anytime. Made with all natural ingredients and kids friendly.

½ cup Brown rice syrup
4 cups Puffed millet
½ cup Soybean butter Non-GMO (melted)
1 cup Dried fruit and nuts (chopped)
Parchment paper

Steps:

  • Prepare a 9-inch metal pan or /ceramic/glass dish. Melt nut butter and brown rice syrup in small saucepan over medium heat, be careful not burn. Remove from heat and set aside
  • In a large mixing bowl, pour puffed millet, melted nut butter and syrup, dried fruit and nuts.
  • Mix well to make sure puffed millet is thoroughly coated.
  • Pour mixture into the pan covered in parchment paper. Press mixture down evenly in pan with spatula.
  • Cool in refrigerator for 1 hour or until firm. When firmed, remove and cut in square and serve.

Growing up for some reason we referred to these as 'Oh Henry Squares'. I've no idea why, but I have not served them without people requesting the recipe and rave reviews. I don't know the origin. It's just been passed on through my family.

½ cup peanut butter
½ cup brown sugar
½ cup corn syrup
2 cups cornflakes cereal
1 cup crispy rice cereal (such as Rice Krispies®)
2 cups confectioners' sugar
2 tablespoons custard powder
½ cup margarine, melted
1 tablespoon warm water, or as needed
4 (1 ounce) squares semisweet chocolate, chopped
2 tablespoons margarine

Steps:

  • Grease an 8x8-inch square pan.
  • Cook and stir peanut butter, brown sugar, and corn syrup together in a large pot over medium heat just until warm and well blended, about 3 minutes; remove from heat. Stir cornflakes cereal and crispy rice cereal into peanut butter mixture; press cereal mixture evenly into the prepared pan.
  • Whisk confectioners' sugar and custard powder together in a bowl. Whisk 1/2 cup melted margarine gradually into custard mixture. Stir warm water into custard mixture to moisten to a spreadable consistency; spread evenly over cereal mixture.
  • Melt chocolate with remaining 2 tablespoons margarine in a microwave-safe bowl, about 1 minute. Pour chocolate mixture over custard layer. Refrigerate cookies until chocolate is hardened, about 30 minutes; cut into 1-inch squares.

Bake at 400° for 30-35 minutes or until puffed and golden brown. Remove to a wire rack to cool completely., For filling, beat the cream cheese, milk and pudding mix in a large bowl until smooth. Spread over puff; refrigerate for 20 minutes., Spread with whipped topping; refrigerate until serving. Drizzle with the chocolate and caramel toppings; sprinkle with almonds. Refrigerate leftovers.
