DAVES COFFEE CAKES RECIPES

Steps:

• Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
• Beat 1 cup white sugar, 1/2 cup butter, and 1 egg in a bowl until smooth. Add sour cream and vanilla extract; mix well. Stir in 3 cups flour, baking soda, and baking powder until mixture comes together in a sticky dough. Spread half the dough evenly into prepared baking dish.
• Beat cream cheese, 1/2 cup white sugar, and 1 egg in another bowl until smooth. Spoon mixture into baking dish over dough. Drop remaining half of dough by spoonfuls over cream cheese mixture.
• Mix pecans, brown sugar, 1/3 cup flour, and 1/3 cup butter in a bowl until mixture resembles a coarse crumble; sprinkle over dough.
• Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 45 minutes.

Steps:

• Preheat the oven to 375F degrees (190C). Grease and lightly flour a 9 x 13 baking dish. Sift together the flour, baking powder and salt. In a mixer bowl using an electric mixer, cream the oil and sugar. Add the egg and beat well then add the milk and mix on high for 1 minute. Put the dry ingredients (flour) in the bowl with the wet ingredients. Gently fold the dry into the wet until just incorporated. Don’t over mix or you will end up with a tough cake. Put the flour, brown sugar, and cinnamon in a bowl. Add the butter. With your finger tips, mix these ingredients until a coarse crumb has developed. Pour half of the batter into the prepared baking dish. Sprinkle with some flour. Using a teaspoon, put small amounts of pie filling so as to evenly distribute the filling over the batter. Add a few small cubes of butter on the batter. Gently spoon the other half of the batter over the filling. Sprinkle evenly with the crumb topping and add a few more small cubes of butter. Bake in a preheated oven (375F or 190C) on the center rack for 45 minutes. Remove from oven and allow too cool in the baking dish for 15 minutes. Slice into desired portions and serve warm with coffee and or a scoop of ice cream. Suggestions: You can use any canned or homemade fruit filling in this recipe. Also a pudding or custard filling is great. Try a caramel or chocolate filling. Let you imagination run wild.
