1 cup chopped pecans
½ cup steel cut oats
½ cup granola
¼ cup coconut oil
¼ cup chopped almonds
¼ cup fresh raspberries
¼ cup raisins
1 medium banana, mashed
1 egg white
1 tablespoon peanut butter
1 tablespoon honey
1 teaspoon vanilla extract
½ teaspoon baking powder
¼ teaspoon ground cinnamon
¼ cup dark chocolate chips, or more to taste

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Line a 9x13-inch baking dish with parchment paper.
  • Combine pecans, oats, granola, coconut oil, almonds, raspberries, raisins, mashed banana, egg white, peanut butter, honey, vanilla extract, baking powder, and cinnamon in a large bowl. Mix until well combined.
  • Transfer mixture to prepared baking dish and press into a thin layer with your hands; you may need to coat your hands with coconut oil so the mixture doesn't stick. Sprinkle chocolate chips on top.
  • Bake in the preheated oven for 15 minutes. Lower oven temperature to 200 degrees F (95 degrees C), and cook until golden brown, about 45 minutes. Let cool completely before slicing into bars.

2-1/2 cups pitted dates, cut up
1/4 cup sugar
1-1/2 cups water
1/3 cup coarsely chopped walnuts, optional
1-1/4 cups all-purpose flour
1 teaspoon salt
1/2 teaspoon baking soda
1-1/2 cups quick-cooking oats
1 cup packed brown sugar
1/2 cup butter, softened
1 tablespoon water

Steps:

  • In a saucepan, combine dates, sugar and water. Cook, stirring frequently, until very thick. Stir in walnuts, if desired; cool. , Sift the flour, salt and baking soda together in a large bowl; add oats and brown sugar. Cut in butter until mixture is crumbly. Sprinkle water over mixture; stir lightly. Pat half into a greased 13x9-in. baking pan. Spread with date mixture; cover with remaining oat mixture and pat lightly. , Bake at 350° for 35-40 minutes or until lightly browned. Cool on a wire rack. Cut into bars.
