CRISP CHINESE PORK RECIPE | BBC GOOD FOOD

Crisp Chinese pork recipe | BBC Good Food image

This mouth-watering pork belly dish with crispy crackling is great for entertaining and so easy to make. Serve with our four ingredient dipping sauce

Provided by Barney Desmazery

Total Time 4 hours 10 minutes

Yield 4

Number Of Ingredients 6

1.3kg piece boned pork belly , skin on and scored, ask the butcher for the thin end
2 tsp Chinese five-spice powder
4 tbsp soy sauce (we used Kikkoman)
small knob fresh root ginger , grated
1 tbsp Thai sweet chilli sauce
1 spring onion , finely chopped

Steps:

  • Rub the pork with the five-spice and 1 tsp fine salt then leave, uncovered, in the fridge for at least 2 hrs, but preferably overnight. When ready to cook, heat oven to its maximum setting. Lay the pork on a rack over a roasting tin, making sure the skin is exposed. Roast for 10 mins before turning down the heat to 180C/fan 160C/gas 4, then leave to cook for a further 1½ hrs. Have a look at the pork – if the skin isn’t crisp, turn up the heat to 220C/fan 200C/gas 7, then cook for another 30 mins until crisp. Leave to rest on a board for at least 10 mins.
  • To make the dipping sauce, mix all the ingredients together with 2 tbsp water. Cut the pork into small pieces, then serve with the sauce, plus boiled rice and steamed greens, if you like.

CHINESE-STYLE BARBEQUED PORK BELLY | SAINSBURY'S RECIPES

Chinese-style barbequed pork belly | Sainsbury's Recipes image

Sticky Chinese-style pork belly or Char Sui, is one of the most popular Chinese/Cantonese dishes. The marinating time gives the meat a good depth of flavour and a lovely sweet and salty contrast really compliments the pork. Goes perfectly with some simple steamed rice.

Provided by Sainsbury's

Total Time 200 minutes

Prep Time 180 minutes

Cook Time 20 minutes

Yield 6

Number Of Ingredients 11

80mls hoisin sauce
80mls soy sauce
2 tbsp rice wine vinegar
2 tbsps honey
2 tbsps soft light brown sugar
1 tbsp minced garlic
1/2 tsp Chinese 5 spice powder
500g pork belly slices
6-8 spring onions - finely sliced
1 tbsp sesame seeds
2 small red chillies

Steps:

  • Combine all the ingredients for the pork - except the pork itself. Whisk together in a small bowl and set aside half the sauce for later.

Add the pork to the remaining sauce and make sure all the meat is covered, cover and let the meat marinate for at least 1-3 hours - the longer the better, overnight is ideal.

When youre ready to cook, pre-heat your grill to a medium heat, 180 degrees. Drain the pork and discard the marinade.

Place the slices of pork onto a shallow baking tray lined with foil. Cook for 15-20 minutes, basting 3 or 4 times throughout and flip half way through - until the pork becomes beautifully caramelised on both sides.

leave to cool slightly before serving with the spring onion, sesame seeds and a drizzle of the original marinde.
