Curry Fish Balls with homemade soft and fluffy fish balls

1 cup minced red onion or shallots
1 tbsp. vegetable cooking oil
25 fish balls (home made) ( , or store bought)
1 box of Thai golden curry paste ( ,100g)
1 cup milk or coconut milk
1 cup water or stock

Steps:

  • Heat up around 1 tablespoon of cooking oil and fry red onion or shallots until slightly softened.
  • Add the curry paste in, heat over slow fire until dissolved. Pour in stock and milk, slightly slide the fish balls in. Simmer for 10 minutes over slow fire after boiling.
  • Turn off the fire and slightly thicken the sauce. Serve hot!

600g fishballs (boiled and cooked)
3 tsp garlic (minced)
2 tbsp curry powder
1 tbsp oyster sauce
¼ tsp salt
1 tsp sugar
1 tsp soy sauce
400 ml water
3 tsp cornflour (mixed with 2 tbsp water)

Steps:

  • To Cook Heat oil in a pot, sauté minced garlic and curry powder until fragrant. Add the water, oyster sauce, salt, sugar and soy sauce. Bring to boil. Add in the fishballs and lower the heat to simmer for 3 mins. Remove the fishballs and set aside. Add in the cornflour solution into the pot. Cook for 1 min while stirring continuously, until the sauce thickened. Pour the sauce over the fishballs. Serve hot.

  • 1. Put the fish fillets in a food processor, or in a mortar with a pestle, and process or pound to a smooth paste.

    2. Put the thick coconut cream from the top of the tin in a saucepan, bring to a rapid simmer over medium heat, stirring occasionally, and cook for 5-10 minutes, or until the mixture "splits" (the oil starts to separate). Add the curry paste and cook for 5 minutes, or until fragrant. Add the remaining coconut milk and mix well.

    3. Use a spoon or your wet hands to shape the fish paste into small balls, about 2cm (¾ in) across, and drop them into the coconut milk. Add the eggplants, fish sauce and sugar and cook for 12-15 minutes, stirring occasionally, or until the fish and eggplants are cooked.

    4. Stir in the galangal and makrut leaves. Taste, then adjust the seasoning if necessary. Spoon into a serving bowl and sprinkle with extra coconut milk, basil leaves and sliced chilli.
