4 large russet potatoes
¼ cup nonfat plain yogurt
1-2 teaspoons curry powder
1 teaspoon salt
2?½ tablespoons chopped scallions

Steps:

  • Preheat oven to 400F. Scrub potatoes well and pierce in several places with a fork.
  • Bake potatoes directly on the center rack until tender, 45 to 60 minutes.
  • Mix yogurt, curry powder to taste and salt in a small bowl. Top each potato with a dollop of the mixture and sprinkle with chives. Serve immediately.

1 tablespoon extra-virgin olive oil
1 teaspoon curry powder
½ teaspoon salt
¼ teaspoon freshly ground pepper

Steps:

  • Preheat oven to 450F and place a rack in the upper third of the oven.
  • Toss potatoes in a large roasting pan with oil, curry powder, salt and pepper.
  • Roast potatoes, turning occasionally with a metal spatula, until golden brown and tender, 30 to 35 minutes.
