Delicious seasoned peas cooked with onions, peppers, bacon, and ham. A New Orleans style dish. Serve over rice.

4 slices bacon
1 small onion, chopped
1 small green bell pepper, chopped
1 (16 ounce) package frozen crowder peas
2 cups water
1 tablespoon garlic powder
1 pinch dried thyme
1 crushed bay leaf
½ teaspoon seasoned salt to taste
2 slices cooked ham, cubed
1 tablespoon chopped fresh parsley

Steps:

  • Place bacon in a skillet over medium-high heat, and cook until evenly brown. Drain and crumble. Mix onion and green bell pepper into the skillet, and cook until tender. Stir in peas and water. Season with garlic powder, thyme, bay leaf, and seasoned salt. Bring to a boil. Reduce heat to low, and simmer 30 to 40 minutes, until peas are tender.
  • Mix ham into the skillet. Adjust seasonings to taste. Continue cooking 5 minutes. Stir in fresh parsley just before serving.

Yield Makes 4 servings

Number Of Ingredients 10

½ large onion, cut in half
½ medium carrot, cut in half lengthwise
2 celery ribs, cut into 2-inch pieces
2 garlic cloves, peeled and cut in half
1 tablespoon olive oil
2 tablespoons jarred ham base
2 cups fresh or frozen crowder peas
2 fresh thyme sprigs
½ teaspoon salt
½ teaspoon pepper

Steps:

  • Cook first 4 ingredients in hot oil in a Dutch oven over medium-high heat, stirring often, 5 minutes. Stir in ham base and 4 cups of water until well blended. Add peas, thyme, salt, and pepper, and bring mixture to a boil. Reduce heat to low, and simmer 20 minutes or until peas are done. Remove from heat; cool 30 minutes.
  • Drain peas, reserving cooking liquid for another use. Remove and discard onion, carrots, celery, and thyme sprigs.
  • Note: For testing purposes only, we used Superior Touch Better Than Bouillon ham base.

  • In two qt pot, add in oil, and brown ham or possibly ham hocks. Add in water, peas, and season to taste. Cover and simmer, stirring occasionally till peas are tender (about one hour). Serve warm over rice or possibly corn bread. Note: All beans, peas may be prepared in the same manner. Dry beans should be rinsed and sorted in a collander before using. Dry beans require a longer cooking time than fresh or possibly frzn legumes. Any of your favorite sausages/seasoning meats can replace ham. Monitor liquids closely while cooking and add in water as necessary to prevent scorching.

  • "Heat a heavy-bottomed pot or Dutch oven over medium-high heat. Add bacon and cook until partially done, do not drain. Add olive oil, green peppers, onions, carrots, celery, crushed red pepper, bay leaves, and thyme sprigs. Reduce heat to medium and cook until vegetables are soft, about 5 to 10 minutes. Add garlic and cook until fragment. Add peas and stock. Bring up to a boil, then lower heat and let simmer, partially covered for, until peas are tender but not mushy, about 30 to 40 minutes. If there is too much liquid, boil beans for a few minutes to reduce. Remove bay leaves and thyme springs. Stir in fresh parsley. Add salt and pepper to taste. Serve warm over rice. Makes about 1 quart or 2 to 4 servings. "
