1 kg (2 lb) fresh mud crab
1 egg, lightly beaten
1 red chilli, finely chopped
1/2 teaspoon crushed garlic
1/2 teaspoon salt
1/4 teaspoon ground white pepper
oil, for deep-frying

Steps:

  • 1. Freeze the crab for about 1 hour until immobilized. Scrub the crab clean. Pull back the apron and remove the top shell (it should come off easily and in one piece). Remove the intestines and the grey feathery gills. Twist off the legs and claws. Using a sharp, heavy knife, chop the body into 4 pieces.

    2. Crack the claws with a good hit with the back of a knife. Beat the egg with the chilli, garlic, salt and pepper in a large bowl. Put the crab pieces in the mixture, cover and refrigerate for 1 hour.

    3. Sift the seasoning ingredients together onto a large plate. Dip all the crab segments in the seasoning and dust off any excess.

    4. Fill a heavy-based pan one third full of oil and heat to 180°C (350°F), or until a cube of bread dropped into the oil browns in 15 seconds. Carefully cook the claws in batches for 7-8 minutes, the body portions for 3-4 minutes, and the legs for 2 minutes. Drain on crumpled paper towels before serving.

3 ounces cream cheese, softened
2 green onions, finely chopped
1/4 cup finely chopped imitation crabmeat
1 teaspoon minced garlic
16 wonton wrappers
Oil for frying
Sweet-and-sour sauce

Steps:

  • In a small bowl, beat cream cheese until smooth. Stir in onions, crab and garlic. , Place about 1-1/2 teaspoons in the center of a wonton wrapper. (Keep remaining wrappers covered with a damp paper towel until ready to use.) Moisten edges with water; fold opposite corners over filling and press to seal. Repeat., In an electric skillet, heat 1 in. of oil to 375°. Fry wontons, in batches, until golden brown, about 1 minute on each side. Drain on paper towels. Serve with sweet-and-sour sauce.

  • To make the cakes, mix together the artichoke hearts, shallot, celery, lemon juice, flour, sugar, and seasonings in a large bowl. You wanna make sure you cut up everything nice and small so this batter sticks together and your patties don't fall apart while you're frying them. Too wet? Add a little more flour. Too dry? Add some water a teaspoon at a time until everything sticks together. Ready to go? OK. Put the breading ingredients all in separate bowls in this order: flour, milk, then bread crumbs. Grab 1/4 of the crabless cake mixture and press it into a patty. You know whatthefuck we're talking about. Then gently place the patty in the flour bowl and coat it on all sides. Quickly place it in the milk bowl so that the flour looks wet or just spoon the milk over if you're struggling. Lastly place that patty in the breadcrumb bowl and coat it again on all sides. Set the prepared cakes in a plate or whatever until you're all done and ready to fry. Grab a large cast-iron skillet or other heavy bottom fry pan and fill it up with at least 1/2 inch of oil. Warm it up over a medium-high heat (around 350-360 F on a deep-frying thermometer). Once the oil is ready to go, delicately place 2-3 cakes in the hot oil at a time. If you throw them all in at once you're gonna fuck your shit up so be patient. Fry them each about 4 minutes, flipping halfway through so that they get all nice and golden brown on all sides. Gently taken them out of the oil when they're golden brown and put them on a paper towel to remove all the excess oil while you fry up the rest of the crew.  Serve immediately with the **Horseradish Dill Aioli on pg. 226 from Lauren's cookbook, Hot for Food * This is a branded seasoning blend that is super popular in seafood dishes from the northeast.   • Melt the butter in a pan, then stir in half the flour. Cook for 1min, take off the heat and gradually beat in the milk to make a smooth, thick sauce. Return to the heat and stir for 1min until the sauce leaves the sides of the pan. Season. Lay a piece of greaseproof paper over the surface and leave to cool.

    When the mix has cooled, stir in the crab meat, spring onions and chilli. Put the remaining flour, eggs and breadcrumbs on three separate plates. Dampen your hands, then roll the mixture into walnut-sized balls. Dust the balls in flour, then egg and finish with a covering of breadcrumbs.

    In a small bowl, mix together all the ingredients for the dipping sauce. Stir in 2tbsp water.

    In a deep frying pan, pour in oil to a depth of 1cm (½in). Heat until a cube of bread sizzles gently. Fry the crab balls in batches for 5-6min, turning occasionally, until golden. Drain on kitchen paper and serve at once with the sauce.
