These seem to be everyone's favorite holiday candy recipe. Could be the melt in your mouth texture, or perhaps the sweet peppermint taste. Could also be the fact that this is the easiest candy recipe around! If stored in airtight container, these can be frozen for a couple months. These can also be made into pretty shapes by rolling in granulated sugar, pressing into candy molds, and dropping them out.

1 (3 ounce) package cream cheese, softened
1 tablespoon butter, softened
3 cups confectioners' sugar
2 drops peppermint oil
1 drop any color food coloring paste

Steps:

  • In a large bowl, combine cream cheese, butter, and confectioner's sugar. Mix in peppermint oil. Color as desired with food coloring paste, or leave white.
  • Roll mixture into small balls, and place on waxed paper. Flatten with a fork dipped in confectioners' sugar. Let dry for about 2 hours on waxed paper, then freeze or refrigerate.

1 package (3 oz) cream cheese, softened
1 tablespoon butter, softened
3 cups powdered sugar
1/4 teaspoon mint or peppermint extract
Red food color, if desired

Steps:

  • In food processor, place cream cheese, butter and powdered sugar. Cover; process, using on-and-off pulses, until mixture comes together into a ball. Add mint extract; process just until incorporated.
  • Place dough on work surface sprinkled with additional powdered sugar. Add a few drops food color to center of dough; knead until dough is evenly tinted. Roll dough into ropes; cut into small pieces. Roll each piece into a ball; place on waxed paper.
  • Flatten each ball with a fork. Let stand 2 hours or until dry.

  • Melt butter in a saucepan over medium heat. Add cream cheese and stir till softened and partially melted into the butter. Turn off the heat. Add 4 c. powdered sugar to the pan and stir to form a soft sugary dough. If dough seems to liquid or loose, slowly add more sugar till it firms up-- it should be firm enough to mold and shape. If making only one flavor, add 1 t. flavoring to the dough (or more to taste) and stir well. Divide dough into four equal portions. If making more than one flavor, add 1/4 t. of flavoring (or more to taste) to each separate portion of dough and stir well. Color dough by adding a few drops of food coloring to each portion of dough. For a pastel color, use 2-3 drops of food coloring per portion. For more vibrant color, add more drops. Shape candies into round disks of about 1/2 T. each. Score them on top with a fork, if desired. Allow to dry on parchment or wax paper for a few hours until the candies set. Store candies in a sealed container in the refrigerator. 48-52 candies
