Nothing says the holidays like an appetizer table speckled with seasonal dips and assorted cheeses. We'll never turn down a hearty spinach dip or a bowl of homemade pimiento cheese, but it's always a delight when a seasonal flavor makes the spread. Enter our Cranberry-Jalapeño Cream Cheese Dip. A welcomed change from the classics we're used to seeing at holiday party after holiday party, this spread melds spicy, tangy, sweet, and creamy all into one bite. The salsa, which features two types of cranberries, thawed and dried, a splash of orange juice, and a hint of jalapeño packs in the flavor and works well against a layer of whipped cream cheese. If you're a lover of heat, you can pack a little more punch by adding jalapeños to the top of the dish too. Once blended and layered together in a large bowl, simply cover for a few hours before your guests arrive. Serve alongside Carr's Table Water Crackers or tortilla chips, but be sure to save any leftovers. It's the perfect topping for toast in the morning and even works well as a condiment for turkey sandwiches the next day

- Process thawed cranberries, dried cranberries, parsley, sugar, orange zest, orange juice, salt, and 1 1/2 tablespoons of the chopped jalapeño in a food processor until finely chopped and well-combined, about 1 minute. Transfer to a large bowl; cover and chill at least 2 hours or up to 1 week.
- When ready to serve, spread cream cheese on a platter, and top with cranberry-jalapeño salsa. Garnish with remaining 1 1/2 tablespoons chopped jalapeño and additional chopped parsley.

- Remove the turkey from the fridge 1 hour before cooking to let it come up to room temperature. Preheat the oven to 220°C/425°F/gas 7. Finely chop the cranberries, then pick the leaves from a few thyme sprigs and mix with the butter, seasoning with a good pinch of sea salt and black pepper. Gently push a rubber spatula between the skin and the breast meat of the turkey to create a pocket, then push in half the butter and smooth it down with your fingers (see tip). Rub any excess butter from your hands over the skin, getting into all the nooks and crannies, then stuff half the remaining thyme sprigs into the cavity. Place the giblets in a large roasting tray with the remaining thyme, then sit the turkey on top and cover the bird snugly with tin foil. Place the turkey in the hot oven and immediately reduce the temperature to 180°C/350°F/gas 4. Cook for 25 to 30 minutes per kilo for a higher-welfare bird, or 35 to 40 minutes per kilo for a standard bird. After 2 hours 40 minutes, remove the foil and spoon some fat from the bottom of the pan over the bird. Carefully dip the bacon in the meat juices and drape or weave over the bird. Return the turkey to the oven for the remaining time, or until golden and cooked through. To check if it’s cooked, stick a knife into the thickest part of the thigh – if the juices run clear and the meat pulls apart easily, it’s cooked. If not, cook it for a bit longer then check again. Use heavy-duty tongs to lift up your bird so all the juices run from the cavity into the tray, then transfer the turkey to a platter, cover with a double layer of foil and a tea towel, and leave to rest for up to 2 hours. Reserve the tray of giblets and juices to make my Chestnut gravy.

- Preheat oven to 375°. Cut biscuits in half and roll into balls. In a small bowl, stir together melted butter and fresh parsley. Place biscuits in a ring around the edge of a medium skillet and brush with butter. Season with salt and pepper. Place brie in the center of the biscuits and use a paring knife to remove the top rind. Bake until brie is melty, 8 to 10 minutes. Add cranberry sauce and cheddar to melted brie and gently fold to combine. Smooth the cheese mixture into an even layer and top with rosemary. Return to oven to melt cheddar, 5 to 7 minutes more. Drizzle with honey and serve hot.
