If you've ever been to California Pizza Kitchen, then chances are you know the joys of a good BBQ Chicken pizza. Delish.com's easy recipe uses tangy gouda, creamy mozzarella, and a hefty dose of red onions and cilantro for freshness. We happen to think it gives good ol' CPK a run for their money.

Steps:
- Preheat oven to 500°. Line two large baking sheets with parchment paper and grease with cooking spray. In a medium bowl, stir together chicken and 1/4 cup barbecue sauce.
- On a lightly floured surface, roll out pizza dough into a large circle, then slide onto prepared baking sheet. Top each pizza with 1/4 cup barbecue sauce, then half the chicken mixture, spreading in an even layer and leaving 1" around the edge bare. Next add an even layer of mozzarella and red onion, then top with gouda. Sprinkle with crushed red pepper flakes if using. Bake until cheese is melty and dough is cooked through, 20 to 25 minutes. Garnish with cilantro before serving.

You just have to plan ahead, making the dough one day before you plan to bake the pizza. This way the dough will get to rest and will rise slowly in the refrigerator—a great technique the pros use.
