The taste of warm, buttery corn on the cob is hard to beat on a summer day, and it makes a great side dish to spicy chicken

100g butter, softened
1 garlic clove, crushed
1 tbsp chopped parsley
4 corn on the cob

Steps:

  • Heat oven to 200C/180C fan/gas 6. Mash butter, garlic and parsley with seasoning.
  • Cut 4 pieces of foil large enough to hold a cob, place a cob on each piece, top each one with butter, then seal edges to form parcels. Bake, or cook on the barbecue, for 30-35 mins or until tender.

Steps:

  • Bring a large pot of salted water to a boil. Add corn and cook 5 minutes.  Drain corn and brush with melted butter, then season with salt and pepper.

    3. Trim and roughly chop the lettuce, and trim and finely slice the spring onions, then add to the bowl.
    4. Break the cheeses into a blender, and spoon in the yoghurt. Peel and add the garlic, followed by the mustard, vinegar and Worcestershire sauce, then blitz until smooth, and season to taste with sea salt and black pepper.
    5. Carefully slice off the corn kernels and add to the bowl. Pour over the dressing, toss together and pick over the coriander leaves, then serve straight away.
