Corn Bread Bites Recipe | MyRecipes image

This recipe also makes a dozen muffins in a standard muffin tin; bake 17 minutes or until golden brown. You also can double the recipe and freeze the extra muffins for up to one month. If you do this, prepare the muffins in two batches so the baking powder doesn't lose its effectiveness while the extra batter waits for the first batch to be turned out of the pans.

Yield 12 servings (serving size: 3 muffins)

Number Of Ingredients 12

⅔ cup all-purpose flour (about 3 ounces)
½ cup yellow cornmeal
1 tablespoon sugar
1 ½ teaspoons baking powder
¼ teaspoon salt
½ cup (2 ounces) shredded sharp cheddar cheese
½ cup reduced-fat sour cream
¼ cup thinly sliced green onions
1 (8 3/4-ounce) can cream-style corn
Dash of hot sauce
1 large egg, lightly beaten
Cooking spray

Steps:

  • Preheat oven to 375°.
  • Lightly spoon the flour into dry measuring cups; level with a knife. Combine flour and next 4 ingredients (through salt) in a large bowl. Combine cheese and remaining ingredients except cooking spray in a small bowl; stir with a whisk. Add to flour mixture; stir just until moistened.
  • Divide batter evenly among miniature muffin cups coated with cooking spray. Bake at 375° for 10 minutes or until golden brown. Cool in cups 2 minutes on wire racks; remove from pans. Cool completely on wire racks.

Yield 16 muffins (1/3 cup honey butter).

Number Of Ingredients 12

1/4 cup butter, softened
1/4 cup reduced-fat cream cheese
1/2 cup sugar
2 large eggs
1-1/2 cups fat-free milk
1-1/2 cups all-purpose flour
1-1/2 cups yellow cornmeal
4 teaspoons baking powder
3/4 teaspoon salt
HONEY BUTTER:
1/4 cup butter, softened
2 tablespoons honey

Steps:

  • In a large bowl, cream the butter, cream cheese and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Stir in the milk. Combine the flour, cornmeal, baking powder and salt; add to creamed mixture just until moistened., Coat muffin cups with cooking spray; fill three-fourths full with batter. Bake at 400° for 18-22 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pans to wire racks. Beat butter and honey until blended; serve with warm muffins.

They're cakey and perfectly sweet with just the right amount of cornmeal. Some of the secrets to making great corn muffins like these are found in restaurant founder Dave Anderson's cookbook. His recipe for corn muffins includes a small box of yellow cake mix and the addition of stone ground cornmeal. However, I found that the cake mix made the muffins taste too much like yellow cake, so I opted for a completely scratch recipe with elements borrowed from my clone recipe for Duncan Hines Yellow Cake Mix. And since stone ground cornmeal is difficult to find, we can run regular cornmeal through a food processor for 5 minutes to pulverize many of the granules to powder. After baking 120 muffins over several days and making a few other adjustments to the cookbook recipe, I can now share with you this original Top Secret Recipe that will produce a dozen corn muffins that taste just like the restaurant version.
