1-1/2 cups all-purpose flour
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
1/2 teaspoon ground allspice
1 large egg, room temperature, lightly beaten
1/2 cup fat-free milk
1/3 cup butter, melted
TOPPING:
2 tablespoon sugar
1/2 teaspoon ground cinnamon
1/4 cup butter, melted

Steps:

In a large bowl, combine flour, sugar, baking powder, salt, nutmeg and allspice. Combine the egg, milk and butter; mix well. Stir into dry ingredients just until moistened. Spoon into greased or paper-lined mini muffin cups. Bake at 400° for 12-14 minutes or until muffins test done. For topping, combine sugar and cinnamon. Brush the tops of warm muffins with butter; sprinkle with cinnamon-sugar.

Ingredients

cooking spray
2 cups all-purpose flour
½ cup white sugar
2 tablespoons brown sugar
1 tablespoon baking powder
½ teaspoon salt
1 egg
1?¼ cups milk
? cup vegetable oil
2 teaspoons vanilla extract
¾ cup mini chocolate chips

Steps:

Preheat oven to 400 degrees F (200 degrees C). Lightly spray 48 miniature muffin cups.
Mix flour, white sugar, brown sugar, baking powder, and salt together in a bowl.
Lightly beat egg in a separate bowl; stir in milk, vegetable oil, and vanilla extract. Mix liquid mixture into flour mixture until incorporated. Fold in chocolate chips. Fill muffin cups 3/4 full with batter.
Bake in the preheated oven until a toothpick inserted in a muffin comes out clean, 10 to 11 minutes. Cool for 1 minute before transferring muffins to a wire rack.
