Number Of Ingredients 7

Homemade Tofu
Crushed ice, for serving
Soy sauce, for serving
Finely chopped scallions, for serving
Fresh finely chopped ginger, for serving
Bonito flakes, for serving
Smoked Japanese salt, for serving

Steps:

  • Divide tofu into 6 equal portions. Transfer each portion to a cheesecloth-lined 5-inch round, 2-inch deep tofu basket set over a bowl. Cover each portion of tofu with cheesecloth. Transfer to a refrigerator and let chill for an hour.
  • Fill six 7-by-7-by-4-inch tofu boxes with ice. Set each tofu basket in a tofu box of ice. Divide each basket of tofu into 2 portions. Place each portion in a small bowl; serve immediately with soy sauce, scallions, ginger, bonito flakes, and Japanese salt.

Marinated dried tofu with cold sauce, first add the dried tofu to the fragrant flavor, and then add the seasonings that you eat at home. It is a good stall for rice and a good cold dish for wine.

300 grams Dried Tofu (Dried Marinated)
15 grams garlic
10gram shallot
10gram ginger
5 grams sesame oil
A spoonful Chili noodles in oil
10gram Vinegar
5 grams Soy sauce

Steps:

  • Marinated dried tofu
  • slice
  • Ginger, garlic, chopped green onions
  • Put it in a bowl and drizzle with vinegar
  • Put a spoonful of oil chili noodles
  • Top with light soy sauce, sprinkle some seasoning
  • Pour the mixed seasoning onto the sliced stewed tofu
  • Drizzle with sesame oil
  • Mix well
  • Serve

Named for the quick back-and-forth shaking of the pan that takes place during cooking, this stir-fry is a quick-fix crowd-pleaser no matter which protein you choose. After a lightning-fast sizzle in your wok or skillet, the crispy tofu gets enrobed in a savory-sweet sesame-scented sauce, which gets tossed with a fresh salad of watercress, thinly sliced onion, and herbs. The result is bite after beautiful bite of peppery, just-wilted greens, fragrant herbs, and of course, irresistibly crispy-chewy tofu. One taste and you’ll understand why I’m such a big fan of this dish. I grew up with tofu, but for people who are new to it, the white blocks can seem alien and challenging.
